Mint Brownies – Grasshopper Bars
These mint brownies are amazing. Often called grasshopper bars, these chewy brownies have a thick layer of mint cream cheese buttercream icing that is delicious!
There are certain combinations that are classic, one that always makes the list is chocolate and mint. I mean there is a reason that Andes chocolates are so popular!
Now, I am a huge fan of frosted brownies. There is something about a delicious chewy brownie topped with creamy icing that is just amazing. I normally make chocolate on chocolate (cause let’s face it you can never have too much chocolate)
But I decided to make a batch with a mint icing and these were born. Let me tell you, these flew out of my kitchen with a quickness!
One of the best things about these mint brownies is that the icing is not super heavy. I made this a cream cheese buttercream so that it light and creamy and contrasts nicely with the rich chewy brownies.
A few notes about this recipe before we get started.
First, this recipe is made easy with a boxed brownie mix, you can also use your favorite from-scratch recipe. My coconut oil brownies go beautifully with this recipe!
Second, coloring the icing green isn’t necessary. It’s just decorative so if you’re not a fan of artificial coloring you can skip it. These are fun to serve for St. Patrick’s Day, or Christmas (you can add red and white sprinkles) with the green icing but they taste as good with white icing!
Here’s what you’ll need to make these mint brownies-
Brownie mix (family size to be made in a 13×9 inch pan)
Ingredients to bake brownies according to package directions
½ Cup Butter (Softened)
½ Cup Cream Cheese (softened)
2 ½ Cups Powdered Sugar
2 tsp Vanilla Extract
1 tsp Peppermint Extract
Green food coloring
¼ Cup Mini Chocolate Chips
The first thing you’ll need to do is bake your brownies according to their package directions.
When they’re done let them cool completely.
To make the icing-
In the bowl of your electric mixer combine your butter and cream cheese until nice and fluffy.
Then add in your vanilla and peppermint extracts and continue mixing.
Now add in your powdered sugar a little at a time mixing between each addition.
If you’d like to make your icing green add a few drops at a time until you get it the color you’d like. I used about 6-7 to get the color of mine.
Now spread your icing across your brownies, I use an offset spatula for a nice smooth result.
Finally sprinkle your mini chocolate chips across the top.
Now cut them into squares to serve, I cut mine into 24 pieces but you can cut them larger if desired.
Serve with a cup of coffee, glass of milk or whatever you prefer!
Mint Brownies
Ingredients
- Brownie mix family size to be made in a 13×9 inch pan
- Ingredients to bake brownies according to package directions
- ½ Cup Butter Softened
- ½ Cup Cream Cheese softened
- 2 ½ Cups Powdered Sugar
- 2 tsp Vanilla Extract
- 1 tsp Peppermint Extract
- Green food coloring
- ¼ Cup Mini Chocolate Chips
Instructions
- 1. Bake brownies according to package directions, allow to cool
completely. - 2. With an electric mixer blend together cream cheese and
butter. - 3. Add powdered sugar a little at a time, beating between
additions until well incorporated - 4. Add in vanilla and peppermint extracts and continue beating.
- 5. Add in green food coloring a few drops at a time until
the desired color is achieved (I used about 8 drops) - 6. Spread frosting in a thick layer on cooled brownies.
- 7. Sprinkle mini chocolate chips across the top.
- 8. Cut into 24 square pieces & serve.
