Creamy Parmesan Italian Sausage Soup Recipe

If you’re looking for a delicious, flavorful and hearty soup look no further. This creamy parmesan Italian sausage soup has a delicious creamy broth, tasty sausage, sundried tomatoes and hearty kale. It is always a hit every time I make it!

When I say this soup is a hit with everyone I mean it! We have some friends who host a soup day every year and last year this soup was voted number one out of over 25 different soups! So I can actually call it “award winning” without any exaggeration.

Ingredients

  • 1 lb Italian Sausage
  • 8 Cups Chicken Broth
  • 2 tsp Minced Garlic
  • 8.5 oz Sun Dried Tomatoes- Drained
  • 5 oz Shredded Parmesan Cheese
  • 1/2 Cup Heavy Cream
  • 1/2 Medium Onion- Diced
  • 5 Cups Chopped Kale
  • 2 Tbsp Olive Oil

Instructions

  • Place the Italian sausage in a large stock pot. Cook over medium heat stirring frequently so it crumbles and cooks evenly, until the sausage is cooked through and no longer pink.
  • Remove from the pan, drain and set aside.
  • Add the olive oil, minced garlic and diced onions to the stock pot. Cook over medium heat for 5-10 minutes or until the onions are translucent.
  • Add in the chicken broth and stir to mix.
  • Add in the drained and chopped sun dried tomatoes. Bring to a simmer over medium heat.
  • Add in sausage and kale, stir to incorporate. Simmer over low for 10-15 minutes or until the kale is soft.
  • Add in the heavy cream and parmesan cheese. Stir in, continuing to heat over low heat until the parmesan cheese is melted and well incorporated.
  • Serve warm.

After it won people asked me for the recipe and I actually didn’t have one! This is one of those recipes that I’ve always just thrown things in until it tastes good. But after many requests I took notes while I was cooking it to get the perfect recipe.

Every time I make this I either double or triple it. It is great to share with friends and family, it makes a delicious dinner on a chilly evening, and it comes together quickly and easily all in one pot!

Ingredient Notes for Creamy Parmesan Italian Sausage Soup

Italian Sausage– I like to use mild Italian sausage for this soup. If you prefer a little more heat you can use spicy Italian sausage. I always buy bulk sausage because it is easy to work with. If you can only find Italian sausage links just remove the casing before you get started.

Chicken Broth– Chicken broth makes a great base for this soup. I keep “Better Than Bullion” on hand so I can make chicken broth any time I need it. You can also use premade or homemade chicken broth or chicken stock.

Minced Garlic– Jarred minced garlic is one of my favorite shortcuts. If you prefer to use fresh garlic cloves and mince them yourself you’ll need 2 large cloves.

Sun Dried Tomatoes in Oil- These are the key ingredient in giving this soup it’s amazing taste. The sundried tomatoes lend a delicious sweetness and tangy flavor to the soup that is simply delicious. You’ll want to drain them and if you prefer smaller pieces you can chop them.

Shredded Parmesan Cheese– Freshly grated parmesan cheese works best for this recipe because it melts beautifully and combines well with the sauce. If you buy pre-shredded parmesan cheese try to find a brand that does not have cellulose so that it will melt well.

Heavy Cream– This adds a delicious creaminess to the soup. If you prefer a lighter or thinner soup you can use half and half or whole milk instead.

Onion- I like to use a yellow onion but if you prefer a sweeter onion you can use a Vidalia. Make sure to finely dice it no matter what kind you choose.

Kale– To make life easy I like to buy the bags of pre-washed, pre-cut kale. Make sure to go through and pick out any thick stem pieces. If you don’t like kale you can substitute spinach. Just keep in mind that it is more delicate and will cook faster and fall apart more.

Olive Oil– Use a high quality olive oil with a good flavor .

How to Make this Creamy Italian Sausage Soup

Place the Italian sausage in a large stock pot. Cook over medium heat stirring frequently so it crumbles and cooks evenly. Cook until the sausage is cooked through and no longer pink.

Remove from the pan, drain off any excess fat and set aside.

Add the olive oil, minced garlic and diced onions to the stock pot. Cook over medium heat, stirring frequently for 5-10 minutes or until the onions are translucent.

Add in the chicken broth and stir to mix. Continue to heat over medium another 5 minutes.

Add in the drained and chopped sun dried tomatoes. Bring the soup to a simmer over medium heat.

Add in the chopped kale, stir to incorporate. Simmer over low for 10-15 minutes or until the kale is soft. The kale will reduce significantly in volume as it cooks.

Once the kale has wilted and gotten soft add in the cooked and crumbled Italian sausage. Stir to mix thoroughly.

Reduce the heat to low. Stir in the heavy cream and grated parmesan cheese. Stir in, continuing to heat over low heat until the parmesan cheese is melted and well incorporated.

Serve warm
