Hearty Delicious Baked Oatmeal

If you are looking for a hearty and delicious breakfast that everyone will love? This baked oatmeal is perfect! It is a little sweet and great for busy mornings.

It has been so cold here…so so so frigid… freeze your nose hair cold.

So I’ve been baking. A hot oven makes a nice warm kitchen.

Nothing helps you face a getting out of bed on a cold morning like a nice hot breakfast. Everyone in or house loves oatmeal, except for Nathan, he hates the texture.

While I don’t consider oatmeal something time consuming to make, I prefer make ahead, grab and eat kind of things in the morning. Things my children can get for themselves while I get their school work set up.

That’s where this comes in. It’s hearty, you can warm it up or eat it cold. Oatmeal lovers love it, and those who hate the texture of regular oatmeal love it too.

If all the boys eat it, it’s a winner, and worthy of sharing!

Here’s what you’ll need for this delicious baked oatmeal-

2-Cups Quick Cooking Oats
1- Cup Old Fashioned Oats
(note: I like to mix the two because it gives it a nice hearty texture. You can use all quick cooking if that’s all you have)
1- Cup Brown Sugar (packed)
2-tsp Baking Powder
1-tsp Salt
1-tsp Cinnamon
2- Eggs
1- Cup Milk
1/2 -Cup Butter melted
1-tsp Vanilla

Get your oven heating up to 350 and lightly butter a 8×8 or 9×9 inch pan

Melt your butter in a large bowl, mix in brown sugar until smooth, add one egg at a time stirring until well mixed.

Now add in milk, oats, baking powder, salt, cinnamon, and vanilla.

If you are using old fashioned oats let it sit for about 20 minutes. If all quick cooking you can skip this step.

Now pour it into your prepared pan and bake for about 40 minutes until just golden brown around the edges. Let cool and enjoy!!

You can serve this baked oatmeal with a little syrup, fresh fruit, cream, or just warmed up by itself! It is delicious no matter how you eat it!
