Delicious Fudgy Coconut Oil Brownies

If you are looking for the perfect chewy, fudgy delicious brownie look no further then these coconut oil brownies!  This Homemade brownie recipe is super easy and delicious!

Coconut Oil Brownies

Brownies are one of my favorite treats. There is something about their chewy chocolate deliciousness that just satisfies a sweet tooth like nothing else.

A couple of years ago I swapped out coconut oil for regular vegetable oil and I fell in love with these homemade brownies.

This brownie recipe is so simple, it is really just as easy as a boxed mix and comes together super quick so you can satisfy your hankering for a brownie in a hurry.

So how do you use coconut oil in baking ?

Using coconut oil in place of other fats is super easy. It is a simple 1:1 ratio. You can swap it out for butter, or vegetable oil and have your recipe turn out just fine.

For this recipe I use unrefined coconut oil because I love the hint of coconut flavor. If you don’t want that added flavor but want the moist deliciousness that coconut gives you can opt for refined coconut oil.

What difference does the coconut oil make in these brownies?

Having made these brownies with vegetable oil and coconut oil everyone in my family prefers the coconut oil version.

Like I mentioned before, there is the option of adding a little coconut flavor with your oil.

Coconut oil is healthier than other oils and has a ton of health benefits so I try to sneak it in anywhere I can.

It also gives the brownies an amazingly moist and chewy texture that makes them amazing!

So here is how you make these Coconut Oil Brownies

1/2 Cup Coconut Oil

1- Cup Sugar

2- Eggs

1-tsp Vanilla

1/3 -Cup Cocoa

1/2-Cup Flour

1/4- tsp Salt

1/4- tsp Baking Powder.

First you’ll want to preheat your oven to 350 and grease the bottom of a 8×8 inch baking pan.

Now stick your coconut oil in a large mixing bowl and microwave it until it is nice and melty. Mine only took about 30 seconds but it depends on how hard your oil is and how strong your microwave is.Or if it is hot in your house and your coconut oil is already liquid you can skip this step!

While the oil is still warm mix in your sugar, using a large spoon.  Stir it for a minute or so and make sure there aren’t any lumps and it’s nice and smooth.

Next add in your eggs and vanilla and mix them in thoroughly.

Now add your cocoa and flour. Mix until it’s nice and smooth but don’t over mix (you don’t want to whip any air into the batter.)

Now pour it into the pan and bake for 25-30 minutes. The top gets a bit of a uniform crust, that’s the best indicator to see if they are done.

If you are able, let them cool completely. They’ll be crumbly if you try to eat them before they’re cooled… so I’ve heard.

Ingredients

  • 1/3 Cup of Coconut OIl
