Use different vegetables– While we love this recipe with broccoli you can easily swap it out with other low carb veggies if you’d like. Some great options are cauliflower, zucchini, asparagus, green beans, spinach or mushrooms. Use different cheese– While I use cheddar cheese for my casserole you can easily swap out for your favorite cheeses. Most cheese is low in carbs so you don’t need to worry about what kind you use. Mozzarella cheese is a great option, pepper jack cheese adds a bit of spice to this low carb chicken casserole, you could also use Monterey Jack or Swiss cheese to create a delicious flavor.
Use homemade ranch seasoning– I use a packet of ranch dressing mix for this easy bacon ranch chicken casserole but if you prefer you can use homemade ranch seasoning.
What is the best chicken to use?
You’ll need 4 cups of cooked chicken for this recipe. I like to use cubed chicken but you can also use shredded chicken if you prefer. I personally like to use boneless skinless chicken thighs because they are a favorite in my house. But you can also use boneless skinless chicken breasts, chicken tenderloins, rotisserie chicken, or it is a great way to use up leftover chicken.
You can cook the chicken however you like. I like to season mine with salt, pepper, garlic powder, smoked paprika and sauté it until it is golden brown. Or you can roast the chicken in the oven, grill it, or even air fry it!

To do this, simply follow the recipe instructions as normal, but rather than baking it immediately, cover the casserole with foil or plastic wrap and refrigerate until you are ready to bake it.

4 Cups Cooked Chicken- cubed or shredded
6 Slices of Crispy Cooked Bacon
1 – 1 oz. Package of Ranch Dressing Mix
5 Cups Broccoli Florets
1 8 oz. Brick Cream Cheese
1 1/2 Cup Shredded Cheddar Cheese
1 1/2 Cup Heavy Cream
How to make Chicken Bacon Ranch Casserole
Preheat the oven to 350 and grease a 13×9 baking dish or casserole dish.
In a medium saucepan over medium heat combine cream cheese, heavy cream, and the packet of ranch seasoning mix. Heat over medium stirring frequently until the cream cheese is melted and the ranch mix is thoroughly incorporated.
In a large saucepan or microwave safe dish steam the broccoli florets for about 2 minutes then drain.
To assemble the casserole, place your cubed chicken in the bottom of the prepared baking pan.
Spread the broccoli across across the top of the chicken evenly.
Pour the creamy ranch mixture evenly across the top of the broccoli and chicken.
Sprinkle the shredded cheese evenly across the top of the sauce mixture.
Crumble or chop your bacon. Sprinkle the bacon pieces across the top of the casserole.
Bake the casserole in the oven and bake for 15-20 minutes or until the cheese is melted and the casserole is heated through.
Serve warm.
Store any leftover casserole refrigerated in an airtight container.
