This delicious pasta dish is similar to one of our favorite casseroles but it has been made into a crockpot recipe. I love this recipe because it is perfect for starting at the beginning of the day so that dinner is ready in the evening.
This delicious flavor combination of chicken, bacon, cheese and ranch has gained popularity over the past several years, it is so delicious it has earned the nickname “crack chicken” because it is hard to resist! How to store this chicken pasta recipe– This wonderful recipe stores well refrigerated in an airtight container for 2-3 days.
Can I use different pasta? Absolutely! While I love rotini in this pasta recipe you can easily swap it out for another shape. Penne pasta or bowtie pasta are both great shapes to use or classic elbow macaroni is also tasty. Just be sure to use 16 oz of pasta no matter what shape you use.
Can I use homemade ranch dressing mix? Yes you can! Using a packet of dry ranch seasoning mix makes this recipe super easy, however if you have a homemade ranch seasoning blend you’d rather use you can use it in place of a packet of ranch dressing mix.
Additions & substitutions-
Extra bacon- If you love bacon you can add extra, or cook extra and leave it out so you can sprinkle crumbled bacon across the top before eating.
Swap out the cheese- If you prefer a little bit of spice you can swap out the cheddar cheese for pepper jack. Plain Monterey jack cheese is another great option for a mild creamy flavor.
Ingredients for crock pot bacon ranch chicken pasta
1 1/2 lb boneless skinless chicken breast
1/2 cup chicken broth
1/2 tsp black pepper
1 dry ranch dressing mix
8 oz cream cheese (cubed)
1 1/2 cup shredded cheddar cheese
1 cup heavy cream
2 cups spinach (chopped)
8 strips of bacon (cooked and chopped)
1 lb of rotini pasta
Scallions (optional)
Here’s how you make this easy slow cooker chicken bacon ranch pasta recipe-
Season the chicken breasts with pepper and place in a 8 quart slow cooker and pour the chicken broth around them.
Sprinkle the dry ranch dressing mix across the top of the chicken breasts. Cube the cream cheese and place it evenly across the top of the chicken.
Cover and cook on low for 5-6 hours or cook on high for 3-4 hours.
Once the chicken is cooked remove it from the crock pot and set aside.
Add in the shredded cheese, heavy cream, spinach and chopped bacon and mix with the juices in the crock pot until well combined. You can chop the chicken or shred it then place the chicken back in the slow cooker and cover and cook for another 30 minutes.
While that’s cooking, cook the pasta according to the package directions until the noodles are cooked al dente.
Drain the pasta and then mix the pasta into the chicken mixture in the slow cooker and stir until evenly coated.
Serve and enjoy! Top with chopped scallions if desired.
