FAQ & Recipe Tips for Slow Cooker Chicken and Sausage

Prep your ingredients ahead of time-

We love how easy this recipe is to dump and go but to make it even easier I like to prep everything ahead of time. You can trim and chop the chicken, cut up the sausage and chop the peppers and onions. I keep each prepped ingredient in it’s own zip top bag in the refrigerator so that when I’m ready to cook I can just dump them all in the crock pot. You can even put the ingredients in freezer bags if you want to prep even more in advance. You can thaw them overnight or put the frozen ingredients into the crock pot and add 2-3 hours to the cooking time.

What is a good substitute for andouille sausage?

If you can’t find andouille sausage the best substitute is smoked sausage or kielbasa. It provides a similar smoky flavor but may not have the same level of spiciness. It is a great option if you want a less spicy dish. If you want to maintain the spice you can add extra Cajun seasoning.

How to serve this slow cooker chicken and sausage-

This dish is delicious served over a base of white rice, brown rice, cauliflower rice or quinoa. It is also great with a loaf of crusty bread, bread sticks or garlic knots.

How to store –

This recipe can be stored refrigerated in an airtight container for 3-4 days. Be sure to let it cool completely before storing.

Ingredients for Crock Pot Cajun Chicken and Sausage

Boneless Skinless Chicken Breasts -Your chicken will need to be cut into bite size chunks. If you prefer boneless skinless chicken thighs you can use them, chicken tenderloins are also a great option.
Andouille Sausage – Andouille sausage is known for its smoky and spicy flavor, often made with pork and seasoned with garlic, pepper, and other spices. You’ll need to cut it into bite size pieces.
Onion
– You can use white or red onion for this recipe. Depending on your preference you can slice the onion or dice it into small pieces.
Bell Peppers– You can use any color bell pepper for this recipe. Red or yellow peppers add a little bit of sweetness while green peppers have more pepper flavor. You can slice them or dice them into small pieces.
Garlic – You’ll need fresh garlic cloves or minced garlic.
Chicken Broth– You can use chicken broth, chicken stock, or if you prefer chicken bullion.
Diced Tomatoes– I like to use petite diced tomatoes because they are nice and small but you can use regular diced tomatoes, whichever you prefer.
Tomato Paste– This helps thicken the sauce and add a nice rich flavor.
Tomato Sauce– You’ll want to use plain tomato sauce not marinara or spaghetti sauce. They are seasoned with Italian seasoning that might change the Cajun flavor of this dish.
Cajun Seasoning – There are several different brands of Cajun or creole seasoning and you can use your favorite or you can make your own if you want to tweak it to your taste.
Cayenne Pepper– Cayenne adds a little more heat to this dish. If you want yours a little less spicy you can omit the cayenne.
Green onions – Sliced green onions are used to garnish this dish, they give it a nice fresh taste. You can omit them if you’d like.

How to Make Slow Cooker Cajun Chicken and Sausage

Chop your chicken and sausage into bite size pieces and add them to the slow cooker.

Slice or dice the onions and peppers and add them into the slow cooker.

Sprinkle the garlic, Cajun seasoning, and cayenne across the chicken and vegetables.

Pour in the chicken broth, tomato paste, tomato sauce and undrained diced tomatoes.

Stir well mix everything well.

Place the lid on the slow cooker and cook on low for 6-7 hours or high for 3-4 hours

Serve over rice if desired and top with chopped green onions

Ingredients

  • 1 pound Boneless Skinless Chicken Breasts cut into small chunks
  • 12 oz Andouille Sausage cut into small rounds
  • 1 cup Onion cut into small pieces
  • 1 cup Bell Peppers
  • 2 cloves Garlic minced
  • 1 1/4 cup Chicken Broth
  • 1 14.5 oz Can Diced Tomatoes
  • 3 tbsp Tomato Paste
  • 1/2 cup Tomato Sauce
  • 2 tsp Cajun Seasoning creole
  • 1/4 tsp Cayenne
  • Green onions for garnish optional

Instructions

  • Chop your chicken and sausage into bite size pieces and add them to the slow cooker.
    1 pound Boneless Skinless Chicken Breasts, 12 oz Andouille Sausage
  • Slice or dice the onions and peppers and add them into the slow cooker.
    1 cup Onion, 1 cup Bell Peppers
  • Sprinkle the garlic, Cajun seasoning, and cayenne across the chicken and vegetables.
    2 cloves Garlic, 2 tsp Cajun Seasoning, 1/4 tsp Cayenne
  • Pour in the chicken broth, tomato paste, tomato sauce and undrained diced tomatoes.
    1 1/4 cup Chicken Broth, 1 14.5 oz Can Diced Tomatoes, 1/2 cup Tomato Sauce, 3 tbsp Tomato Paste
  • Stir well mix everything well.
  • Place the lid on the slow cooker and cook on low for 6-7 hours or high for 3-4 hours
  • Serve over rice if desired and top with chopped green onions
