Neapolitan Rice Krispies Treats are a great combination of two delicious desserts! The chewy, crunchy, marshmallow texture of cereal treats combines with the classic flavor layers of chocolate, vanilla and strawberry to create a mouthwatering dessert that everyone loves!
When you think of summer treats do you automatically think of ice cream? There is nothing as classic as an ice cream cone on a hot summer day! I have always loved Neapolitan because who wants to choose from the classic flavors of chocolate, strawberry or vanilla ice cream? Whoever decided to combine them into one is genius!
Now, another favorite dessert of mine is rice krispies treats, I have always been a fan of the crunchy, chewy, marshmallowy goodness, and I love to make new flavors, and fun varieties of cereal treats. So I decided that I needed to make a neapolitan ice cream inspired batch of cereal treats, and these were born! They make an amazing snack choice for the summer by combining two treats in one! They also require no baking so they don’t heat up the house!

FAQ & Tips for success
This recipe is made in three parts, you’ll be making the chocolate, vanilla, and strawberry layers separately so it is a great idea to divide your butter, marshmallows, and rice cereal before getting started. You can use separate pans for each layer or wash your pan in between mixing the layers of rice krispie treats.
To make a bigger batch– This recipe use the same amount of ingredients as a batch the classic recipe for rice krispies treats but it is made in an 8×8 pan. This results in nice thick layered treats. If you want to make a 13×9 inch pan full to feed a crowd, you can easily double the recipe!
What if I can’t find freeze dried strawberries? I used dried strawberries for this recipe because I love fresh strawberry flavor. However, I know sometimes they can be difficult to find! If you’re having trouble locating some you can swap them out for strawberry jell-o! You’ll want to use a 3 oz box of strawberry jell-o and you can mix it into your marshmallow mixture in the same way I’ve mixed in the freeze dried strawberries.
Can I use cocoa krispies– Absolutely! If you would rather swap out cocoa krispie cereal nstead of using chocolate chips you can! Just use 2 cups cocoa krispies for the chocolate layer, and regular rice krispies for the strawberry and vanilla layers.
Here’s what you’ll need for these Neapolitan rice krispies treats
Ingredients
6 Cups Rice Krispies– Any crispy rice cereal will work!
60 Marshmallows- I like to use large marshmallows for this recipe because they are easy to count and divide evenly for each layer. You can use mini marshmallows you’ll need about 6 cups of mini marshmallows.
4 ½ Tbsp Butter- I like to use salted butter but you can use unsalted butter if desired. No need to soften it before starting because you’ll be melting it.
¼ Cup Semi Sweet Chocolate Chips– I prefer to use semi sweet chocolate chips for a deep chocolate flavor, if you prefer milk chocolate you can use milk chocolate chips.
1 oz Package Freeze Dried Strawberries– Make sure they are crunchy freeze dried strawberries, not the chewy dried ones. I get mine at Aldi, but you can find them at most grocery stores.
1/2 tsp Vanilla Extract– Make sure to use fresh, real vanilla extract.
Red Food Coloring– This is optional if you want a deeper pink color for your strawberry layer. The strawberries don’t add a ton of color so if you want to add a few drops of red food coloring you can.
Here’s how to make these tasty cereal treats-
First grease an 8×8 in square pan with butter or line it with parchment paper.
Next place 1 ½ tablespoons butter and 20 marshmallows in a large saucepan. Heat over medium-low heat stirring frequently until the marshmallows and butter are completely melted.
Add in the chocolate chips and continue heat stirring frequently until the chocolate chips are completely melted and thoroughly incorporated in the marshmallow mixture, the entire mixture should be brown.
Remove from heat and fold in two cups Rice Krispies cereal until evenly coated.
Press the cereal mixture into the bottom of your prepared pan. I like to coat my hands with butter so that the mixture doesn’t stick. You can also use a spatula if you don’t want to use your hands, spray it with non stick cooking spray to keep it from sticking, or you can use a piece of wax paper.
Next in a clean pan melt another 20 marshmallows and 1 ½ Tbsp butter over medium heat stirring frequently until the marshmallows and butter are melted completely. Add in vanilla extract and stir until well incorporated. Remove from the heat and add in 2 cups of rice krispies and stir until the cereal is completely covered.
Pour the mixture evenly across the top of your chocolate layer, and press firmly and evenly into place.
Now place the freeze dried strawberries in a food processor and process until very finely ground.
In a clean pan mix together the last 20 marshmallows and 1 ½ Tbsp of butter and melt over medium heat stirring frequently. Once melted stir in ground strawberries until well incorporated. If a deeper red color is desired you can add a few drops of red food coloring. Stir until well mixed.
Add in the final 2 cups of rice krispies and stir until completely coated.
Press the strawberry layer on top of your vanilla layer, pressing firmly and evenly with buttered hands or a spatula.
Allow the treats to cool completely before cutting. If you’ve lined the pan with parchment you can lift them out and place them on a cutting board to cut into even pieces.
Cut into 9 squares and enjoy! You can cut them into smaller squares if desired.
Store in an air tight container.

I’m so excited to try these. I used to give my grandchildren Neopolitan ice cream, Neopolitan ice cream sandwiches and made Neopolitan milk for them using plain white milk, strawberry milk and chocolate milk. They love to speak the word Neoplitan. I can’t wait to make these with them. Two are in college now and one still in high school,but I know they will faint and fall out when they see these!
