Chop your chicken and sausage into bite size pieces and add them to the slow cooker.
1 pound Boneless Skinless Chicken Breasts, 12 oz Andouille Sausage
Slice or dice the onions and peppers and add them into the slow cooker.
1 cup Onion, 1 cup Bell Peppers
Sprinkle the garlic, Cajun seasoning, and cayenne across the chicken and vegetables.
2 cloves Garlic, 2 tsp Cajun Seasoning, 1/4 tsp Cayenne
Pour in the chicken broth, tomato paste, tomato sauce and undrained diced tomatoes.
1 1/4 cup Chicken Broth, 1 14.5 oz Can Diced Tomatoes, 1/2 cup Tomato Sauce, 3 tbsp Tomato Paste
Stir well mix everything well.
Place the lid on the slow cooker and cook on low for 6-7 hours or high for 3-4 hours
Serve over rice if desired and top with chopped green onions
