Simple Cucumber Avocado Salad

This cucumber avocado salad is the perfect side dish for a summer day! Fresh crisp cucumbers, creamy avocado and a delicious dressing combine to make a refreshing and delicious salad!

Have you ever tried to sprout an avocado seed?? I have one, on a table in my bedroom. A big ol’ seed with toothpicks stuck in it, balanced on a glass of water. It’s been there for weeks…. weeks… and it is just starting to crack.

My love for growing food seems to have rubbed off on my little one because this whole growing an avocado thing was his idea. I tried to explain that we live in Ohio and avocado trees don’t grow here and I didn’t think that the seed would even sprout….

Yet there it is, in my bedroom, in the spot with the best sunlight… the things we do for our kids…

Anyhow, I digress… onto what we’re really here for.

Can I just say how much I love a super easy side dish that tastes like a million bucks? I love it even more if it’s one that is made with delicious fresh from the garden (well not the avocado… yet)  ingredients, and is light and tasty for a summer evening.

This cucumber avocado salad is one of those. Comes together in minutes, tastes like you put a ton of effort into it, and if you happen to actually have a growing avocado tree this would be a great way to use them! I’ll settle for using my cucumbers, for now.

Here’s what you’ll need for this cucumber avocado salad –

3-4 Medium size cucumbers

2- Avocados, ripe but still firm.

1/4- Cup Mayonaise

2- Green Onions thinly sliced

1- tsp Lime juice

1/2- tsp Garlic Powder 

1/2- tsp Smoked Paprika

Salt to taste

 

Chop your cucumbers and avocados into bite sized pieces. (peeling your cucumbers is optional, I like to leave the skin on, but you can peel them if you’d like.)

Toss them together in a large bowl along with the green onions

In a smaller bowl mix together your mayonaise and lime juice, garlic powder, and smoked paprika.

Now pour the mayo mixture over the cucumbers and avocados and gently mix, salt to taste.

Serve immediately and enjoy!
