FAQ & Tips for Making These Scones
Pay attention to your everything bagel seasoning-
The secret to the everything bagel flavor of these scones is in the seasoning. However all everything bagel seasoning isn’t created equal. Some are very heavy on the salt and you don’t want to end up with salty scones. If yours has a lot of salt you can omit the salt in the recipe and make sure to use unsalted butter. If you want to whip up a batch of your own it is really easy. This recipe is a great one!
Make sure your butter and cream cheese are cold-
Unlike many baking recipes these scones don’t require room temperature butter they require cold butter! For the best results you want to make sure that your butter is nice and cold! If your kitchen is warm you can chop it into cubes and pop it back in the fridge before using. Make sure it is nice and firm and cold before you get started.
Don’t overmix your dough-
If you’ve never made scones before you may be tempted to get them mixed until all of the lumps are gone. However you don’t need to! The dough should be like biscuit dough with small lumps and visible pieces of butter or cream cheese.
Refrigerate the dough if needed-
If your kitchen is warm your dough might be a little on the soft side as the butter softens. Even the heat of your hands while working with the dough can change the temperature quite a bit. If your dough feels really soft and squishy after you’ve formed your scones you can pop it in the fridge for about 30 minutes before baking. Cool dough results in nice tender scones.
