We love these bagels toasted with cream cheese or made into a breakfast sandwich with egg, bacon and cheese. They are perfect for making ahead for a quick grab and go breakfast for a busy weekday morning.
If you don’t like cottage cheese don’t worry! The cottage cheese curds are blended up so there is no cottage cheese texture. There is also no cottage flavor in these bagels. They are just a nice rich dough that is delicious!

How long do these bagels keep?
I store these bagels in an airtight container in the fridge and they keep well for about 5 days. At room temperature they keep for 2-3 days in an airtight container. I often double the recipe so that we have enough bagels on hand for a few days.
Seasoning ideas for these protein bagels-
I love to top these bagels with everything bagel seasoning there is something so tasty about the blend of seasonings, sesame seeds and poppy seeds, but you can flavor them in different ways. You can leave them plain if you prefer a plain bagel. You can top them with shredded cheese for a delicious cheesy bagel. You can add cinnamon sugar and raisins for a sweet bagel.
Can you use special blend flours?
Yes! I have made these bagels using King Arthurs special flour blends. I’ve used the Keto flour blend and the Gluten-Free flour blend. They change the texture of the bagels slightly but they work really well. So this recipe is great for making keto bagels or gluten free bagels easily!
Ingredients for Cottage Cheese Bagels
All Purpose Flour– Some cottage cheese bagel recipes call for self-rising flour but I developed this recipe with all-purpose flour because it is what I have on hand all of the time. I prefer to use white flour but you can also use whole wheat.
Cottage Cheese– I like to use full-fat cottage cheese but you can also use 2% fat cottage cheese. You can use your favorite brand of cottage cheese. No matter which one you use you’ll want to drain off any excess liquid before starting.
Baking Powder- This helps the bagels rise. Make sure your baking powder is fresh so that your dough will rise properly.
Eggs– You’ll need a fresh large egg for the dough and one for the egg wash.
Salt- This is important for flavoring the dough. Even with seasoning on top salt in the dough is important for flavor.
Here’s How to Make Cottage Cheese Bagels
First preheat the oven to 350 and line a baking sheet with parchment paper.
Drain any excess liquid from your cottage cheese before measuring.
Now we’re going to combine the cottage cheese and one large egg. If you have an immersion blender you can place the cottage cheese and egg in a large mixing bowl and use the immersion blender to blend them together. You can also place them in a food processor or blender and blend cottage cheese and the egg until smooth and then transfer the mixture to a large baking sheet.
In a medium size bowl combine one cup of flour, baking powder, and salt. Stir to mix well.
Add the flour mixture into the egg mixture stirring by hand or with the dough hook of a stand mixer until everything is well incorporated. The dough will be very sticky and stretchy. You can add up to 1/4 cup more flour to make the dough manageable.
Turn the dough out onto a floured surface and gently knead into a large ball.
Divide the ball into four equal sections.
Form each dough ball into a bagel shape and place onto your prepared baking sheet
In a small bowl beat an egg with one tablespoon of water to form an egg wash.
Use a pastry or basting brush to brush bagels with the egg wash and then sprinkle with everything bagel seasoning.
Bake bagels for 25-30 minutes or until golden brown.
Allow bagels to cool before slicing and serving or storing in an airtight container. Serve the bagels with your favorite spreads or toppings.
