We love the delicious flavor combination of lemon and blueberry. Fresh blueberries are a sweet contrast against the tart lemon flavor that is irresistible. These cookies are soft and tender like sugar cookies, and they are rolled in sugar to create a slight crunch on the outside and edges that is absolute perfection!

Ingredients

  • 1/2 Cup Butter softened
  • 3/4 Cup Sugar
  • 1 Egg
  • 1 Tbsp Lemon Juice
  • 1 tsp Lemon Zest
  • 1 3/4 Cups Flour
  • 1/4 tsp Salt
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 3/4 Cup Fresh Blueberries
  • 1/4-1/2 Cup Sugar for rolling

Instructions

  • In a medium size bowl mix together the flour, salt, baking soda and baking powder.
    1 3/4 Cups Flour, 1/4 tsp Salt, 1/2 tsp Baking Soda, 1/2 tsp Baking Powder
  • In large mixing bowl or the bowl of a stand mixer combine the sugar, lemon juice, lemon zest and softened butter. Cream together with an electric mixer or stand mixer until well incorporated.
    1/2 Cup Butter , 3/4 Cup Sugar , 1 Tbsp Lemon Juice, 1 tsp Lemon Zest
  • Add in the egg and continue mixing until well mixed.

  • Gradually add in the dry ingredients, mixing and scraping down the sides of the bowl between additions.
  • Gently fold in the blueberries until evenly mixed.
    3/4 Cup Fresh Blueberries
  • Cover the bowl and place it in the refrigerator for at least an hour.
  • Preheat the oven to 350 and line a baking sheet with parchment paper.
  • Pour about 1/4 cup of sugar in a shallow dish or bowl.
    1/4-1/2 Cup Sugar
  • Scoop out dough about a tablespoon at a time with a dough scoop or spoon.
  • Roll into a ball and gently roll the dough in the sugar to coat it.
  • Place on the prepared cookie sheet.
  • Continue with remaining dough placing dough balls about 2 inches apart.
  • Bake for 12-15 minutes or until the edges are a light golden brown and the center is set.
  • Remove from the oven and allow to cool on the baking sheet for about 5 minutes before moving to a cooling rack to cool completely.
  • Store in an airtight container.

These are the simple ingredients you’ll need for these blueberry lemon cookies. For the exact measurements be sure to print the recipe card.

  • Butter– You will need softened butter for this recipe so make sure to remove it from the fridge about an hour before you want to bake. You can use salted butter or unsalted butter whichever you prefer.
  • Sugar– White sugar or cane sugar work well in this recipe. For coating the cookies you can also use sanding sugar.
  • Egg– Large eggs work best for these cookies.
  • Lemon Juice– I like to use fresh lemon juice for this recipe. I buy a lemon and use it for the juice and the zest. Bottled juice works well too if you prefer to use it.
  • Lemon Zest– Fresh lemon zest adds just a little more lemon flavor to the cookies. If you prefer to omit it you can. If you don’t have the zest and want to add more lemon flavor you can add 1/4 tsp of lemon extract in place of it.
  • Flour– All purpose flour works well for these cookies. You can use bleached or unbleached flour.
  • Salt– You can use regular table salt, sea salt or Himalayan pink salt.
  • Baking Soda– This helps the cookies rise. Make sure your baking soda is fresh so it will work well.
  • Baking Powder – It is important to make sure you have fresh baking powder so that your cookies rise properly.
  • Blueberries – We use fresh blueberries for this recipe but you can also use frozen. If you use frozen blueberries toss them in about a tablespoon of flour before folding them into the batter. The moisture from the frozen berries may effect the texture of the cookies and cooking time.

Yes! You can swap out all purpose flour for a gluten free baking mix to make this cookie recipe gluten free. Make sure that it is a 1:1 mix or follow the package instructions to tweak the recipe.

Scoop the dough before refrigerating-

If you have trouble scooping refrigerated dough or you want to only bake a few cookies at a time you can scoop the cookie dough into balls before you refrigerate the dough. Once the dough is refrigerated you can roll it in sugar and place on the prepared baking sheet. If you want you can keep some refrigerated or even freeze for later.

Variations and additions –

While we love this recipe exactly as it is there are a few ways to doll these cookies up even more. You can add white chocolate chips for another layer of flavor. You can frost these cookies with a cream cheese frosting or drizzle them with a lemon glaze.
