Easter Egg Fruit Pizza Cookies

Celebrate spring with these fun and easy Easter egg fruit pizza cookies! Sugar cookies topped with a delicious cream cheese frosting and seasonal fruit and berries! They are as delicious as they are beautiful!

You can use your favorite sugar cookie dough-

These cookies can be made with any sugar cookie dough recipe or pre-made dough. So you they can be super quick and easy by picking up a sugar cookie mix or refrigerated sugar cookie dough at the grocery store, or your can make your favorite recipe from scratch to create these delicious treats!

You can use your favorite fruits-

The possibilities are endless with fruit and berry combinations on these cookies! I used strawberries, blueberries, raspberries, kiwis and mandarin oranges, but you could also use bananas, pineapples, peaches, or any other fruit you love!

They are a nice light dessert-

After a heavy holiday meal these cookies make a nice sweet but light dessert. The cream cheese frosting isn’t overly sweet and the fruit and berries add a nice tartness to counter the sweetness.

Tips for success-

Chose seasonal fruit & berries– These are the best when the fruit is fresh and flavorful! So make sure to buy them close to when you’ll be making the cookies and get the freshest fruit possible.

Pat your fruit dry– If your berries are very juicy, or you’re using canned fruit like mandarin oranges it is a great idea to pat it dry with paper towels before decorating your cookies. If there is too much liquid the cookies can get soggy.

Decorate right before serving– If you want to make these ahead of time you can make the cookies and frosting in advance. It is best to frost them and top with fruit right before you’re ready to serve them so that the fruit is fresh and doesn’t leak too much juice onto the cookies.

Keep fruit from browning– Most fruit keeps it’s color well even after being cut, but fruits like apples, pears and peaches can sometimes turn brown after cutting. If you choose to use these fruits be sure to toss them lightly in lemon juice after cutting to prevent them from browning.

Here’s what you need to make these fruit pizza cookies-

Sugar Cookie Dough– Refrigerated, mix or your favorite recipe. You want a dough that doesn’t spread when it bakes

8oz. Brick Cream Cheese– I like to use full fat cream cheese, make sure it is softened to room temperature before starting

6 Tbsp Butter– If you use salted butter you can omit the pinch of salt or use unsalted and add a bit of salt to your frosting. Your butter will need to be softened to room temperature before starting.

2 Cups Powdered Sugar– Also called confectioner’s sugar or icing sugar, you want fresh powdered sugar that is lump free.

1 tsp Vanilla Extract– Make sure to use real vanilla extract that is nice and fresh.

Pinch of salt

Variety of fruits & berries– Strawberries, blueberries, raspberries, oranges, kiwis etc.

Here’s how to make these delicious treats-

First prepare your sugar cookie dough according to your package or recipe.

Next roll our your dough out on a lightly floured or parchment paper lined surface to about 1/4 inch thick.

Cut out egg shapes and place on a parchment lined cookie sheet.

Bake according to your package or recipe directions, until golden brown around the edge.

Place on a wire cooling rack to cool completely.

Once your cookies are cooled it is time to frost and cool them.

To make the frosting-

Place softened cream cheese and butter in a mixing bowl and beat it with an electric mixer until light and fluffy.

Add vanilla and then add powdered sugar gradually, beating after each addition until all of the sugar has been mixed in.

Chop your fruits and berries into small pieces.

Spread frosting on each cookie and then arrange fruit on the cookies in fun patterns or designs.

Serve immediately.
