These pumpkin bars are delicious! All the taste of pumpkin pie combined with a delicious buttery crust and pecan topping. They are the perfect holiday dessert!
“They’re not fit to eat”
That is what my grandma said all the time about things she cooked. I’m not sure why she had no faith in her cooking, because it was all delicious. My best memories of her are helping her in the kitchen, cooking, doing dishes, and of course, eating.
Her house was the gathering place for our family. It was where we celebrated birthdays, holidays, and enjoyed each other’s company.
And even though she always worried that her cooking wasn’t good enough we all loved her food and cleaned our plates every time.
I don’t know what it is about grandma’s recipes. They seem to always be heavy on the butter and sugar, and full of delicious homey flavor that is good for the tastebuds and the soul.
This time of year I tend to crave these comforting dishes even more and these pumpkin bars are one of my favorite recipes in my grandma’s recipe box.
I was lucky enough to inherit it when she passed and I love pulling out the cards and seeing her handwriting. I love having those little pieces of her still here with me and tasting the flavors of her kitchen in my own.
Here’s what you’ll need for these Pumpkin Bars
For the crust-
1- Cup Flour
1/2- Cup Quick Oats
1/2- Cup Brown Sugar (packed)
1/2- Cup Butter (softened)
For the filling-
1- Can Pumpkin Puree
1- Can Evaporated Milk
2- Eggs
3/4- Cup Sugar
1 1/2- tsp Pumpkin Pie Spice
For the topping
1/2 Cup Pecans (chopped)
1/2 Cup Brown Sugar (packed)
2- Tbsp. Butter (melted)
The first thing you’ll want to do is get your oven pre-heated to 350.
Now in a bowl combine your crust ingredients (flour, oats, brown sugar, and butter) Stir until it is well combine and a dough is forming. You can do this by hand or use the dough hook with an electric mixer.
Once your crust is finished press it into the bottom of a 13×9 inch pan and pop it in the oven for 15 minutes.
While your crust is baking mix your filling ingredients with an electric mixer until well incorporated.
When your crust is finished pour your filling mixture into the pan. Pop it back in the oven and bake for 25 minutes.
In a small bowl mix together your nuts, brown sugar, and melted butter until crumbly.
Sprinkle it over the top of your filling and place it back in the oven for another 15-20 minutes or until the filling is set in the center.
Let it cool before cutting into squares.
Enjoy! Serve these pumpkin bars up at the end of your meal with a cup of coffee and everyone will love them!
Delicious Pumpkin Bars
Ingredients
- 1 Cup Flour
- 1/2 Cup Quick Oats
- 1 Cup Brown Sugar
- 1- Cup Butter softened
- 1- Can Pumpkin Puree
- 1- Cup Evaporated Milk
- 1- Eggs
- 3/4- Cup Sugar
- 1 1/2 tsp. Pumpkin Pie Spice
- 1/2 – Cup Chopped Pecans
- 2 Tbsp Melted Butter
Instructions
- Mix together flour, oats, 1/2 Cup brown sugar, and softened butter. Press into the bottom of a 13×9 inch pan. Place in a pre-heated 350 degree oven for 15 minutes.
- Mix together pumpkin, evaporated milk, eggs, sugar, and pumpkin pie spice. Pour into baked crust. Bake for another 25 minutes.
- Mix together nuts, 1/2 cup brown sugar, and melted butter. Sprinkle over filling and bake an additional 15-25 minutes or until filling is set in the center.
