What to serve with this breakfast casserole?
This sausage and biscuit casserole is a complete meal on it’s own but if you are looking to round out a meal you can add some simple side dishes. I like to serve this with fresh fruit or berries, either just simply chopped or in a nice fruit salad. It is also delicious with a green salad or fresh veggies for more of a brunch meal. Hash browns or home fries are also a great side dish for this hearty breakfast casserole.
What sausage is best for this casserole?
I like to use ground breakfast sausage for this recipe but if you have another favorite sausage you can use it! Sausage with maple flavor is delicious or for a little bit of spice you can use hot sausage or Italian sausage. You’ll want to use bulk ground sausage and not sausage links or patties. If you have a sausage gravy recipe you love that is different than the one I’ve used here you can easily use it instead. I know some people who prefer to make their own homemade gravy and others that prefer a gravy mix. If you use a different recipe than mine just make sure there is the same amount of sausage gravy so that you have enough!

In a large skillet brown sausage, crumbling as it cooks until it is cooked through. Remove the sausage from the pan with a slotted spoon leaving the drippings in the pan.
