This roasted asparagus is so delicious! It is topped with a creamy Asian inspired sesame sauce that is amazing! It is the perfect side dish for any occasion.
I love asparagus, even with the stinky pee after-effects it is by far one of my favorite veggies.
I was honestly never a fan until one day my step-mom introduced me to roasted asparagus, and I realized that prepared well it is has an amazing flavor.
I usually just toss it on a baking sheet with some olive oil, a little garlic and salt and call it a day. However one day I was getting ready to make some and my sesame oil was out on the counter, I thought it would add another layer of deliciousness to the roasted asparagus so I decided to give it a try.
It was a win.
Sesame oil has a delicious nutty taste. It gives an almost instant Asian flair to dishes and it makes this asparagus perfect! Add to that this creamy sauce and you have a dish that tastes decadent and fancy but that is simple to whip up for a weeknight dinner.
I like to use the thinnest asparagus I can find, the fresh kind that is no bigger than a pencil is my favorite. It used to be that you could only find it in the spring but I’ve had luck finding it in the middle of the winter. I love roasted asparagus with our holiday meals so it is great that we have it available year round.
However, if you can get your hands on some fresh out of the garden spring asparagus for this recipe it is perfect!
Here’s what you’ll need for this Sesame Roasted Asparagus
2- lbs. of Asparagus
2-Tbsp Olive Oil
1 tsp & 1 Tbsp – Sesame Seed Oil (Find it in the Asian section of your grocery store or on Amazon)
½ Cup Mayonnaise
2 Tbsp Rice Vinegar
1 tsp Soy Sauce
½ tsp Garlic Powder
1 Tbsp Sesame Seeds
Salt
The first thing you’ll want to do is pre-heat your oven to 425.
Then trim the ends off your asparagus. I like to snap them off, just bend the asparagus and see where it breaks naturally, or you can chop them all off at once.
Next toss the asparagus with your olive oil and 1 Tbsp sesame seed oil. Spread it out evenly on a baking sheet and sprinkle with salt.
Now pop it in the oven for 15-20 minutes. Half-way through the cooking time you want to rearrange them on the baking sheet so they all roast evenly.
While the asparagus is roasting you can make the sauce. Combine your tsp of sesame seed oil, mayonnaise, soy sauce, rice vinegar, and garlic powder in a medium size bowl, stir until well incorporated.
When your asparagus is done roasting drizzle it with the sauce and sprinkle on your sesame seeds.
Serve while still warm.
This roasted asparagus is perfect for any occasion, it goes great with nearly everything and your whole family will be asking for more!
