Delicious White Chocolate and Peppermint Rice Krispie Treats

There are certain flavor combinations that just go together. Dark chocolate and raspberry, chocolate and peanut butter… things that just scream yum!!! when you say them together.

I’ll confess here that I’m not a white chocolate fan… normally. Like on the chocolate scale of life I love, love, love super dark chocolate, followed closely by regular dark chocolate, with milk chocolate bringing up the rear (I won’t turn it down though!) White chocolate though? I can usually pass on, it doesn’t bring me the joy that other chocolate does.

Unless of course you combine it with it’s perfect mate… peppermint.

That just changes everything.

So when I as strolling through the grocery store with the ingredients for plain old Rice Krispie treats in my cart and saw candy canes I decided I needed to make these spectacular treats.

Boy are they good! A little pepperminty with the sweet creaminess of white chocolate all wrapped up in the chewy goodness that is a rice krispie treat! They’re so super easy and perfect for your holiday gatherings. Whip up a batch of these in 10 minutes and you’ll be the hit of the party!!

Here are a few notes to make sure these Rice Krispie Treats turn out perfect!

#1- Crush your peppermints well– You can use candy canes, or peppermint candies for these treats. The thing you want to make sure of is that you make the pieces nice and tiny, you don’t want chunks that are too big and will make chewing uncomfortable. To crush them you can place them in a ziploc baggie and hit them with a hammer or rolling pin.

#2- Butter your hands– When it is time to press the cereal mixture into the pan the easiest way to do it is with your hands. Before you start pressing butter your palms so that you don’t end up a sticky mess!

#3 Decorating- If you decide that you want to decorate your treats with a drizzle of white chocolate and it isn’t melting smoothly add a small amount (about 1/2 a tsp) of Crisco, coconut oil, or butter and stir it in. That will help your chocolate smooth out and melt nicely!

Here’s what you’ll need for these White Chocolate and Peppermint Rice Krispie Treats  –

1/2 – Stick of Butter (plus a little more for buttering your pan)

1- Bag Marshmallows

6- Cups Crispy Rice Cereal

1/4- Cup Crushed Candy Canes or Peppermints (plus about 1 Tbsp for sprinkling on top)

1/2- Cup White Chocolate Chips (plus a little more to drizzle)

Now just like other rice krispie treats you’ll start by buttering your pan, a 13×9 works best!

In a large pot over medium heat, melt your 1/2 stick of butter, and then add in your marshmallows, stir gently until all the marshmallows are melted.

Once the marshmallows are melted throw your chocolate chips in and stir well until they are melted. Remove from the stove and stir in the rice krispies and crushed candy canes.

When you have everything nicely mixed press the whole mixture nice and evenly into your prepared pan. If you want to now is the time to melt your reserved white chocolate chips to drizzle and sprinkle your candy cane pieces!

I have this chocolate drizzler from Pampered Chef and it works beautifully!


Let them cool for about 30 min… if you can… and then cut into squares!

These white chocolate and peppermint rice krispie treats are great with a cup of hot cocoa for the perfect winter treat!

White Chocolate Peppermint Rice Krispie Treats

Ingredients

  • 1/2 – Stick of Butter (plus a little more for buttering your pan)
  • 1- Bag Marshmallows
  • 6- Cups Crispy Rice Cereal
  • 1/4- Cup Crushed Candy Canes or Peppermints (plus about 1 Tbsp for sprinkling on top)
  • 1/2- Cup White Chocolate Chips (plus a little more to drizzle)

Instructions

  1. Grease a 13x9 inch pan.
  2. In a large pot melt butter over med/low heat, once it is melted add in the marshmallows and continue heating, stirring frequently until the marshmallows are melted completely.
  3. Add in the white chocolate and continue stirring until the chocolate is melted and well incorporated.
  4. Remove the pan from the heat and add in crushed peppermint and rice krispies. Stir well until the cereal is evenly coated.
  5. Press the mixture into your prepared baking pan. Sprinkle with additional peppermint and drizzle with chocolate if desired.
  6. Let treats cool about 30 minutes before cutting
