Apple Cinnamon Muffins

These cinnamon apple muffins full of fresh apple flavor with a delicious cinnamon crumb topping! These tender muffins are a great breakfast, brunch or snack!

When most people think of fall they think of pumpkin, but another amazing fall flavor is apple! Apple season means all kinds of apples! Fresh tart apples, crunchy sweet apples, and lots of delicious apple recipes! This muffin recipe is one of my favorite ways to use fresh apples it has delicious chunks of apple and shredded apples so it is full of flavor! The shredded apples help create delicious moist muffins that everyone loves.

FAQ & TIPS

What are the best apples to use?

For this recipe I like to use granny smith apples because they are nice and firm and tart. But pretty much any firm apple will work well. Honeycrisp apples are one of my favorites, pink lady and Fuji are also great varieties to use! I recommend using medium apples because they tend to not be as juicy so they won’t add too much juice to your muffin mixture.

To create nice muffin tops-

You’ll notice that for this recipe you start at a high oven temperature and then turn it down for the rest of the baking. Doing this creates nice high muffin tops on these delicious apple muffins! If you prefer not to have to mess with your oven temperature you can set the oven to 375 for the whole baking time.

Here’s what you’ll need for these apple cinnamon muffins-

2 Cups All Purpose Flour

1 tsp Baking Powder

½ tsp Baking Soda

½ tsp Salt

½ Cup Butter- melted

1 Cup Sugar

2 Large Eggs

1 ½ tsp Vanilla Extract

¾ Cup Grated Granny Smith Apples

¾ Cup Peeled and Finely Chopped Granny Smith Apples

(about 3 apples total)

½ tsp Cinnamon

Topping-

1/3 Cup Brown Sugar

1 Tbsp Flour

1 Tbsp Butter- Softened to room temperature

1/8 tsp Cinnamon

Here’s how to make these tasty muffins

Preheat oven to 425 and line a muffin pan with paper liners.

Place flour, baking powder, baking soda, salt and cinnamon in a large bowl and whisk to mix well.

In a large mixing bowl using a whisk, electric hand mixer or stand mixer, mix together melted butter, vanilla and eggs, add in sugar and continue mixing until well incorporated.

Add in sugar and mix until well mixed.

Add in about 1/2 of the dry ingredients to the wet ingredients and mix in with a wooden spoon.

Add in the shredded apples and continue mixing.

Add in the remaining flour mixture and continue mixing until well incorporated.

Fold in the chopped apples and continue mixing.

This makes a very thick batter so make sure to mix thoroughly.

In a medium bowl mix together ½ cup brown sugar, 1 Tbsp flour, 1 Tbsp butter, and 1/8 tsp cinnamon together with a fork or pastry cutter to create a crumbly topping.

Scoop batter into the prepared muffin tin and fill the muffin cups about ¾ of the way.

Sprinkle streusel topping mixture onto the tops of the muffins.

Place in the oven for 5 minutes, then turn the oven temperature down to 350 and continue baking for another 15-20 minutes or until baked through.

Remove from oven and allow to cool for about 10 minutes on a wire rack before removing from the pan and enjoying warm or cooling completely.

Store leftovers in an airtight container.
