Fall is in the air, at least here in Ohio, I talked to my BFF in Georgia today and she said summer is still in full swing there!
But as far as I’m concerned when the calendar flips to September it is fair game on all things fall. I mean who really wants to prevent all things pumpkin spice and caramel apple??
Not me.
In fact it is only September 3rd and I’ve already picked up a bag of pumpkin spice coffee from the grocery store, and whipped up these caramel apple cookie bars.
I do love summer but when fall starts to make its appearance I choose to embrace it for all the things I love.
This time of year as kids head back to school and we fall back into our homeschooling groove I find that we have a lot more parties and gatherings to attend.
I love making homemade treats to take along with us to any get together (and to have at home!) and I am a huge fan of treats that have a bit of a wow factor but that are really easy to make.
Treats like these acorn cookies!
These cookies are really very easy. The peanut butter cookie tops are delicious chewy cookies that pair beautifully with the chocolate kiss bottoms. My boys ate these up in no time!
Here’s what you’ll need for these Peanut Butter Acorn Cookies
3/4 Cup Smooth Peanut Butter
3/4 Cup Sugar- I use organic cane sugar
1- tsp Vanilla
1- Egg
1- Tbsp. Flour
1/2 Cup Mini Chocolate Chips
60 Chocolate Kisses – unwrapped
First get your oven pre-heated to 350.
Now with an electric mixer, blend together your peanut butter, sugar, vanilla, egg, and flour.
Now scoop 1/4 tsp size scoops onto a cookie sheet. I lined mine with a Silpat but you can use parchment paper, or leave it unlined.
I have a round 1/4 tsp that I use that was perfect. If needed you can shape your dough into little domes.
They don’t spread or grow much so you can fit a lot on one cookie sheet, just leave a little room in between.
Now pop them in the oven for 10 minutes or until the edges are a nice golden brown. Allow them to cool on the cookie sheet for 5 minutes before removing to a cooling rack.
Once you have all your cookies baked and cooled it is time to assemble your acorns.
Place 1/4 cup of your mini chocolate chips in a microwave safe bowl. Microwave in 10 second increments stirring in between until your chocolate chips are nice and smooth.
I set up a little assembly line with my cookies, kissed, chocolate chips and melted chocolate to make things easier but you can do it however it works for you.
Now you can dip your kisses in the chocolate and press a cookie on, or spread melted chocolate onto the cookie, whatever works for you.
After you have the cookie and chocolate kiss attached you can use the melted chocolate to attach a mini chocolate chip “stem” on top.
Once you have all your acorn cookies assembled let them cool so the melted chocolate chips hold the cookie in place.
There you go! The perfect fall cookie for any occasion. These acorn cookies are sure to be a hit!
Peanut Butter Acorn Cookies
Ingredients
- ¾ Cup Smooth Peanut Butter
- ¾ Cup Sugar
- 1 tsp Vanilla
- 1 large egg
- ¼ tsp Salt
- 1 Tbsp Flour
- ½ Cup mini chocolate chips
- 60 Chocolate kisses- unwrapped
Instructions
- Preheat oven to 350
- Beat together peanut butter, sugar, vanilla, egg and flour and salt with an electric mixer until well combined.
- Spoon dough by rounded ¼ tsp.(approx.) onto a baking sheet, form dough into domed circle shape.
- Bake for 10 minutes or until golden around the edges. Allow to cool on baking sheet for 5 minutes before removing to cool completely on a cooling rack.
- Microwave ¼ cup of mini chocolate chips in a small bowl on high in 10 second increments stirring in between until chocolate is melted and smooth.
- Dip the flat part of each kiss in the chocolate and then press a cookie into place. Use the same method to attach mini chocolate chip “stems” – You can do both at once or do all the bottoms then all the tops.
