Strawberry Cream Cheese Bread

This strawberry cream cheese bread is bursting with flavor and a great way to use those summer berries! The bread is light and flavorful and the berries juicy and sweet! Perfect!

If there is one thing that doesn’t last for 5 seconds in my house it is strawberries. The teenager can polish off a box of berries in no time flat… it is really something else. Last year I said I was going to take him to the strawberry patch have them weigh him before and then after and I’d pay for the weight of the berries!

So when I have a recipe that I want to make I either have to buy a whole bunch or hide them in the back of the fridge, or get to baking before he sniffs out the berries! A couple of weeks ago strawberries were on sale at Aldi so I snatched up a bunch knowing when I got home that I would whip up a batch of this strawberry cream cheese bread. Even though I hate to heat the kitchen up during the summer it is so worth it to have this bread that is packed with strawberry flavor.

And so since I was quick enough to get it made before the berries were eaten by hungry boys I’m sharing it with you today!

Here’s what you’ll need for this strawberry cream cheese bread:

1/2 Cup Butter Softened
1- Cup Sugar (I used Cane sugar)
4oz- Cream Cheese softened
2- Eggs
1- tsp Vanilla
2- Cups Flour
2- tsp Baking Powder
1/2- tsp Baking Soda
1/2- tsp Salt
1/2- Cup Greek Yogurt
1 1/2- Cups Strawberries chopped
Preheat your oven to 350
In a mixer combine butter, cream cheese, and sugar until nice and fluffy. Add the eggs and mix well. Add in vanilla, flour, baking powder, baking soda, and salt. Mix well. Add Greek yogurt and mix until incorporated. Using a spoon or spatula gently fold in strawberries.
Put in a greased loaf pan and bake for 50-60 minutes.
Let cool, slice and ENJOY!!
