I am always on the lookout for easy meal ideas that my whole family will enjoy, so when I came across this Greek chicken salad a few years ago I knew it would be a hit in my house.
This salad is full of flavor, the dressing is made with Greek yogurt so it is creamy and tangy, and the salad is full of crunchy veggies. You can eat it over some shredded lettuce or spinach as a salad or put it on your favorite rolls for an amazing sandwich.
Now when I first made this I did with chicken, but now that I’m a vegetarian I make it with a vegetarian chicken. my personal favorite brand is Quorn, it is the perfect texture and the flavor is delish!
So you can make this Greek chicken salad for carnivores & vegetarians alike, they’ll all love it!
Here’s what you’ll need for your Greek Chicken Salad
This makes about 6-8 nice big sandwiches.
3- Cups Cooked Diced Chicken (you could use a rotisserie or leftover grilled chicken or a vegetarian replacement )
3 Mini Cucumbers- chopped – the mini ones are best because they don’t have seeds, if you can’t find them you can use a regular cucumber just remove the seeds.
1/2 – Cup sliced Black Olives
1/4- Cup chopped Red Onion
1- Cup Chopped Grape Tomatoes- More if you really like them
1- Container Feta Cheese
For the Dressing
1 1/4- Cups Greek plain yogurt (2 small containers)
1- Tbsp- Minced Garlic
1- Tsp Dill
1/2- tsp Salt
1- tsp Lemon Juice
First mix up all of your dressing ingredients. The longer you let this sit the better, cover it and put it in the fridge while you get everything else together.
Chop your veggies & chicken and mix them together in a large bowl.
Add your feta cheese and then cover with dressing mixing well to coat.
That’s it! Your Greek chicken salad is ready to eat!
Serve it up on nice big rolls, with crackers, or on top of a salad!!
