Cheesy Spinach Lasagna Roll-Ups

If you love lasagna you’ll love these cheesy spinach lasagna roll ups! They are full of flavor, easy to make, freeze beautifully and delicious!

I love anything that contains spinach, cheese, and garlic, I mean really that combination is so very very tasty.

These delicious little roll-ups are so good and freeze beautifully, they’re a great make ahead meal for the days you don’t want to cook. So if you’re feeling industrious double this recipe, have some for dinner tonight and freeze some for another day!

Here’s what you’ll need for your cheesy spinach lasagna roll-ups

1- 24 oz. Container of Ricotta Cheese

1/2- Cup Parmesan cheese

1- tsp salt

3- tsp minced garlic

2- Eggs

1- pkg frozen chopped spinach- thawed and squeezed dry

8-10 (about 1/2 a box) Lasagna noodles

pinch of nutmeg

pepper to taste

Your favorite pasta sauce – I use my Greek Yogurt Alfredo Sauce 

The first thing you want to do is combine all of your ingredients except the lasagna noodles in a bowl and stir well.

Then you want to get your noodles boiling. I personally like to work with 3-4 at a time so that they are easy to handle and don’t get stuck together. Boil your noodles for about 8 minutes or as directed on your package for al dente.

While your noodles are cooking spray the bottom of a 13×9 inch pan with non stick spray, or oil it with a little olive oil.

Once your noodles are cooked you want to lay them flat to cover them with filling. I like to lay them on a clean dish towel so that they don’t slip all over the place.

You want to keep the filling within the edges of the noodles and leave about 1/2 an inch at the end so that you can seal up the rolls.

Starting at one end of your noodle roll it up and then place it seam side down in your prepared pan.

Repeat with all of your noodles until you have a nice pan full of lasagna rolls.

If you’d like to freeze these for later place them on a greased cookie sheet and just let them cool and then pop the cookie sheet in the freezer. Once they are completely frozen you can place them in a freezer bag and get them out when ever you’re ready to cook them!

Once you have your pan all full of cheesy spinach lasagna roll-ups you’ll want to cover them with your favorite sauce! These are delicious with marinara or alfredo, or even just a little garlic and butter!

Now pop them in the at 375 for about 20-25 minutes.

If you are reheating from frozen put a little water in the bottom of your pan, cover it with foil and heat for 40-45 minutes.

Now you’re ready to eat! Serve these cheesy spinach lasagna roll-ups with a nice salad and some bread for a delicious dinner any night of the week!
