Cilantro Lime Coleslaw

Boy it has here. After the weather going back and forth for a while it has decided to get hot and stay hot!
This time of year I like to cook lighter food, something that isn’t heavy sitting in your stomach when its a million degrees out.
This recipe fits the bill, it is light, refreshing, and so so so easy to make. The dressing is a blend of light olive oil and citrus juices that make for a delicious departure from the usual creaminess of coleslaw dressing. It is the perfect side dish for a picnic, barbeque or any weeknight dinner. Great with burgers, seafood, or anything else you want to throw on the grill!
What I love most about this cilantro lime coleslaw is that it comes together in minutes and only requires a few ingredients. If you want to make it even easier you can use pre-shredded bagged coleslaw mix, just cover it in the cilantro lime dressing and you’re good to go!
Here’s what you’ll need for this cilantro lime coleslaw –
6- Cups thinly sliced Cabbage ( 1/2 a large head)
1/4- Cup chopped Cilantro
1- tsp Sea Salt
1/4- tsp Pepper
1/4- Cup Lime Juice
2- Tbsp Orange Juice
3-Tbsp Extra Virgin Olive Oil
In a medium size, bowl combine your lime juice, oj, and olive oil. Whisk it all together.
In a large bowl toss together your cabbage, cilantro, salt, and pepper.
Pour the dressing over the cabbage mixture, stir until everything is well incorporated and let sit about 15 minutes before serving.
Super easy right? This cilantro lime coleslaw is crunchy, light, tasty, and so great for a spring or summer meal!

I made this today for a lunch get together with family. We were having chili dogs, so coleslaw was a given, but I don’t like the traditional coleslaw sauce, so I tried this. It was delicious. Very fresh and tasty, perfect summer food. Thanks for the recipe!
