I’ve planned menus for years. It helps keep life a little more sane around my house throughout the week.  One of the things I always take into consideration when I’m planning our meals for the week is what we have going on. If I have plenty of time to make something that takes a lot of prep and cooking then I like to do that. But some nights I know I’ll have about 3 minutes to get dinner on the table so I need something super quick or that I can make ahead of time… but hopefully still healthy too.

This chickpea salad is of my favorite recipes for those nights. I love chickpeas, they have a great texture and taste. This is a great vegetarian alternative to chicken or tuna salad! Spread it on some nice hearty bread and top it with some fresh spinach and you have a tasty tasty sandwich. It is one that is also great to whip up for a quick, healthy lunch.


Here’s what you’ll need for this chickpea salad:

2 Cans of  Garbanzo beans- drained

2- Green Onions

1/3- Cup Mayo

1/4- tsp Smoked Paprika

1/2- tsp Garlic Power


The first thing you want to do is thinly slice your green onions. Now put your garbanzo beans in a big bowl. You want to mash them. I like to use a pastry cutter- one of these if you don’t know what I’m talking about.

If you don’t have one you can use a large fork or a wooden spoon… pretty much anything you can mash with. Smush them until they are about half smashed, leave them a little chunky. Now mix in your green onions, mayo, garlic and smoked paprika. Stir until everything is well incorporated. Taste it and sprinkle on a little salt if you want to!

That’s it!! Super simple, perfect for lunch or a busy weeknight dinner! Put it on crackers, in a pita, or on your favorite bread or bun!
