What is the best brand of brownie mix to use? There are so many different brands of brownie mix out there you might wonder which one to use. These easy brownie cookies can be made with pretty much any box brownie mix. You’ll want to use a “family size” 18-19 ounce mix. Some good ones to try are this Betty Crocker brownie mix or this Ghirardelli brownie mix, or you can use your favorite store brand.
How do I store these cookies? These easy cookies keep beautifully! Just store them in an airtight container and they’ll keep for several days.
Don’t overbake– Since these cookies are brown you can’t watch for a golden brown so it is important to pay attention to the cooking time. If you want a gooey center you can bake them until the edges just appear dry. If you want them a little more set bake them until the entire surface appears dry and starts to crack. You might want to do a test batch with a couple of cookies to find the sweet spot and adjust the baking time to get the fudgy brownie texture that you love.
Make them dairy free– If you are dairy free you can still enjoy these fudgy brownie mix cookies! Just swap out the butter for coconut oil. You’ll need the same amount and it needs to be melted. You can also use avocado oil, or vegetable oil.
Here’s what you’ll need for these cookies
1 – 13×9 Size Brownie Mix (18.9 oz)
2- Eggs
¼ Cup Butter- Melted
¼ Cup All Purpose Flour
1 Cup M&M’s
½ Cup Chocolate Chips
1-2 Tbsp Water
Here’s how to make these cookies
First you’ll want to preheat your oven to 375 line a baking sheet with parchment paper.
In a large mixing bowl combine brownie mix and flour. Stir until the flour is well incorporated.
Add in eggs, 1 tablespoon of water and melted butter, mix until well blended. This creates a thick dough, you can add another tablespoon of water a little at a time if the dough is too dry.
Next fold in the chocolate chips and ¾ cup of the M&M’s until well mixed.
Scoop out dough 1 tablespoon at a time, roll into a ball and place on prepared cookie sheet. Space your balls of dough about 2 inches apart.
Place in the oven and bake 10-13 minutes or until the top is cracked and appears dry.
Remove from the oven and immediately press the extra M&M’s into the tops of the cookies.
Allow to cool on the baking sheet for about 3 minutes and then move to a cooling rack to cool completely.
