There is something about homemade fudge that makes it one of the best treats out there! For a long time I was intimidated by making fudge at home, I didn’t want to to have to use a candy thermometer or use any cooking techniques I wasn’t familiar with. Little did I know that there are easier ways to make fudge that result in delicious, smooth, creamy, rich fudge that everyone loves.

This easy fudge recipe is full of red velvet flavor, comes together quickly, and is the perfect addition to your holiday celebrations, parties, or any time you want a delicious sweet treat. This is a great recipe for making and giving as gifts because it packages well, looks fancy and festive, but is easy enough to whip up a few batches to give to everyone. It makes the perfect gift!

We love this fudge because not only does it have the delicious cocoa taste of red velvet but the white fudge layer tastes like cream cheese frosting which gives you the full red velvet experience! This is one of my favorite recipes for a red velvet treat that everyone loves!

Here’s a few tips for making this easy fudge

Mix by hand-

For the red velvet base layer you’ll want to mix by hand. This recipe is fairly easy to mix, most of the ingredients are warm and melty so they are easy to blend together. I like to use a wooden spoon for mixing mine. Using an electric mixer can result in too much air bubbles being whipped into the fudge and it won’t be as dense and fudgy. If you need to use a mixer make sure to keep it on low and not to over mix. You’ll need an electric mixer for the cream cheese layer but be sure not to overbeat or whip too much air into the mixture.

Use no-taste gel food coloring-

This delightful red and white fudge gets it’s deep red color from food coloring. Red velvet cake’s color comes from the reaction between cocoa powder and vinegar and/or buttermilk. Since those ingredients are lacking in this recipe we have to give it a little help to achieve that beautiful color. The food coloring you use in this recipe is very important! Gel food coloring is more concentrated than liquid food coloring so you don’t need to use as much so you don’t end up with a bitter flavor added to your beautiful fudge. Wilton’s makes a special no-taste red gel food coloring that is perfect for this recipe. If all you have is liquid you can use that just use it sparingly, the red color won’t be as bright but you don’t want to risk altering the taste.

Here’s what you’ll need for this easy red velvet fudge recipe-

For the fudge layer-

4 Tbsp Butter– I like to use salted butter, if you use unsalted butter add a pinch more salt. You’ll be melting the butter so no need to soften it ahead of time.

3 Cups Mini Marshmallows- Small marshmallows melt easily, if you only have large marshmallows you can use them but the cooking time will be longer and it is harder to measure them correctly.

1 Cup Sugar- Regular white granulated sugar works well, you can also use cane sugar.

½ Cup Heavy Cream– This adds a richness and creaminess to the fudge. Heavy cream and heavy whipping cream can both be used for this recipe.

¼ Cup Cocoa Powder– Use unsweetened cocoa powder.

½ tsp Vanilla Extract– Make sure you have pure vanilla extract for the best flavor

1 ½ Cups of White Chocolate Chips– Make sure your white chocolate chips are fresh so they melt well. You can also use white chocolate bark, chop it into small chunks before measuring.

½ tsp Salt– Regular table salt or Himalayan pink salt work well.

½- 1 tsp Tasteless Red Gel Food Coloring- No-taste gel food coloring is a must for a rich red color(see note above for more detail) if you only have regular liquid red food coloring you can use it but need to use far less so it doesn’t effect the taste.

Optional- Sprinkles- I use red sanding sugar for this batch but you can use any sprinkles you’d like! Dress these up for Christmas, Valentine’s Day or any occasion!

For the cream cheese frosting layer-

2 oz Cream Cheese– Your cream cheese needs to be softened to room temperature before you get started.

1 Tbsp Butter– Salted or unsalted butter work well, make sure it is softened.

1 Cup Powdered Sugar- Also called confectioner’s sugar, make sure it is lump free.

¼ tsp Vanilla

1/3 Cup White Chocolate Chips

Here’s how to make this easy fudge recipe

First line an 8×8 inch square pan with parchment paper, across the bottom and up the edges of the pan.Then butter the parchment, set aside.

Place 4 tablespoons butter in a medium saucepan over medium/low heat, add in marshmallows, cocoa powder, heavy cream, and sugar stirring frequently until marshmallows are melted and the mixture is smooth and well mixed.

Turn the heat to low and add in vanilla and 1 1/2 cup white chocolate chips. Continue stirring frequently until the chocolate chips are melted and well incorporated.

Add in 1/2 teaspoon food coloring and mix, add in additional food coloring if a deeper color is desired, stirring after each addition until the desired red color is achieved.

Pour the fudge mixture into your prepared pan and smooth evenly across the pan.

Place the pan in the refrigerator for at least an hour.

Once the red velvet layer has set in the fridge it is time to make the cream cheese layer.

In a medium bowl cream together butter and cream cheese, add in vanilla and mix well.

Gradually add in powdered sugar, mixing after each addition until all the powdered sugar is mixed in.

Place 1/3 cup white chocolate chips in a microwave-safe bowl. Heat in 30 second intervals stirring after each one until the white chocolate chips are totally melted and smooth. Or place them in a double boiler over medium heat and melt until smooth.

Pour the melted white chocolate over the butter and cream cheese mixture. Mix on low speed until well mixed.

Spread evenly over top of the red layer.

Sprinkle with sprinkles if desired.

Place in the refrigerator until the top layer is hardened. (about 30 minutes)

When you’re ready to serve remove the fudge from the pan with the parchment. Place on a chopping block and cut into squares. I like to cut the fudge into 9 even squares but you can make them larger or smaller.

To store- cover with plastic wrap or place in an airtight container and keep refrigerated.
