FAQ & Tips
What brownie mix is best?
For these truffles you can use your favorite brownie mix! Avoid any that have nuts or chocolate chips added, you’ll just want plain brownie mix. You’ll also want to make sure to get a 19 oz box to have enough mix for your truffles.
Why do I need to microwave the brownie mix?
You might find the first step of this recipe a little weird because it involves heating the brownie mix in the microwave. The reason for this is because food safety rules advise against eating uncooked flour. Heating it in the microwave can “cook” it enough to kill any germs or bacteria.
To make rolling easier-
When it’s time to roll your truffles it can get a little sticky. Slightly dampening your hands can help keep the mixture from sticking. I like to keep a damp paper towel next to where I’m working to dampen my hands.
Here’s what you’ll need for these brownie truffles
19 oz (13×9 in pan size) Brownie Mix
2 Tbsp Chocolate Syrup
2 Tbsp Corn Syrup
¼ Cup Water
Christmas Sprinkles or Colored Sugar
Place dry brownie mix in a large microwave safe mixing bowl. Place in microwave and heat in 30 second increments stirring between each for about 1 ½ minutes or until temperature is 160 (I use an instant read thermometer to check)
Remove from microwave and add in corn syrup, chocolate syrup and water.
Stir until everything is well incorporated and smooth.
Place sprinkles in a shallow dish.
Scoop out 1 tbsp of brownie mixture at a time and roll into a ball. Slightly dampening your hands for rolling keeps the batter from sticking to them.
Roll in sprinkles to coat. Place on plate or baking sheet.
Repeat until all batter has been made into truffles.
Chill for at least 1 hour before serving.
Store in an airtight container and serve chilled.
