Ground beef fajitas are a quick and easy version of the family favorite! Ready in less than 30 minutes they are the perfect weeknight meal. Serve them up with rice, tortillas for a dinner the whole family will love!

While we love burgers or meat loaf one of my favorite quick dinners to whip up with ground beef are these easy ground beef fajitas! We love the combination of perfectly seasoned beef and delicious fajita vegetables with all of our favorite toppings. The whole family loves this easy recipe!

How to Serve Ground Beef Fajitas-

We like to serve these fajitas wrapped in warm tortillas or over a bed of rice in a fajita bowl. They are great topped with all your favorite fajita toppings like sour cream, pico de gallo or salsa, chopped avocado or guacamole and shredded cheese. I love that everyone can personalize their meal to be exactly what they want. We like to add some fresh chopped cilantro and a squeeze of fresh lime juice for some added freshness and flavor.

These are also great served over a plate of tortilla chips with toppings to create tasty loaded nachos.

Side Dishes for These Fajitas-

These fajitas are an easy weeknight dinner and a complete meal on their own. If you’re looking for the perfect side dish we like to serve them with Spanish rice, refried beans, or a nice side salad.

How to Prep this Recipe Ahead of Time-

This easy and delicious recipe is great to prepare ahead of time so that it is ready to throw together for a quick week night dinner. I like to slice the peppers and onions and place them in airtight containers so they are ready to go. You can also mix up your fajita seasoning ahead of time so it is ready to use without having to get out the measuring spoons.

You can also cook rice ahead of time and keep it refrigerated to reheat when you are ready to serve. Also chop or prep any toppings so they are just ready to grab and go!

How to Store These Fajitas-

These easy fajitas store well refrigerated in an airtight container. They will keep well for about 4 days. To reheat them you can microwave them or reheat over medium heat covered in a skillet with a couple of tablespoons of water until heated through.

Variations and Substitutions-

Use a different ground meat – These are delicious made with ground beef but they can also be made with ground turkey or ground chicken.

Ingredients for Fajitas with Ground Beef

Fajita Seasoning– For this fajita recipe you can use store bought or homemade fajita seasoning. I personally like to use my homemade recipe but if I’m in a hurry I grab a packet from the grocery store.

Ground Beef – I like to use a lean ground beef, usually I use a 90/10. If you use a higher fat ground beef be sure to drain it after you brown it.

Onions– I like to use yellow onions, you can also use a white onion or a sweet onion if you prefer.

Bell Peppers– I like to use a variety of bell peppers. I usually use a green pepper, a yellow pepper and a red pepper. You can use a variety or three of your favorite.

Olive Oil– You’ll need a little oil for cooking your veggies. I like to use olive oil or avocado oil.

Tortillas and toppings– These fajitas are great on flour tortillas or corn tortillas. We like to serve them with our favorite toppings like sour cream, guacamole, salsa, shredded cheese, black olives and shredded lettuce.

Here’s How to Make Ground Beef Fajitas

Place ground beef in a skillet over medium high heat sprinkle with 1 Tbsp fajita seasoning.

Brown the ground beef until it is no longer pink.

Remove from skillet and drain, set aside.

Add olive oil to skillet add in the bell peppers and onion and 1 tbsp fajita seasoning cook over medium heat for 15-20 minutes or until the fajita veggies are softened.

Add the cooked ground beef back to the skillet and another 1 tbsp fajita seasoning. Stir the beef and veggies together and heat over medium heat until the meat is warmed through.

Serve with corn or flour tortillas and your favorite fajita toppings.

Ingredients

Homemade Fajita Seasoning

  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 2 tsp Salt
  • 1 tsp Pepper
  • 2 tsp Cumin
  • 1 Tbsp Chili Powder
  • 1 tsp Smoked Paprika
  • 1/2 tsp Oregano

Ground Beef Fajitas

  • 3 Tbsp Fajita Seasoning homemade or store bought
  • 2 lbs Lean Ground Beef
  • 2 Medium Onions
  • 3 Bell Peppers
  • 1 tbsp Olive Oil

Instructions

  • Place ground beef in a skillet over medium high heat sprinkle with 1 Tbsp fajita seasoning. Brown the ground beef until it is no longer pink.

  • Add olive oil to skillet add in the bell peppers and onion and 1 tbsp fajita seasoning cook over medium heat for 20-25 minutes or until the fajita veggies are softened.
