Easy & Delicious Cheeseburger Pie

This cheeseburger pie (also called impossible cheeseburger pie) is a perfect meal for a quick weeknight dinner! It is hearty, cheesy, and perfectly seasoned to create a meal your whole family is sure to love!

Pair this cheeseburger pie with your favorite veggie or a nice salad for a complete and easy weeknight meal!

I remember when I was growing up my mom had this Bisquick cookbook. One of the recipes that she made all the time was “Impossible Cheeseburger Pie”

I remember as a kid loving the nights where it was on the menu!

This is one of those recipes that your family will love. It is the perfect blend of hearty and savory with a healthy helping of cheese! It has all the flavor of cheeseburgers but in an easy to make casserole.

I’ve made a few tweaks over the years and so this recipe isn’t the original, but it is just as tasty and always a hit with your family!

If you’ve hung out with me before you know that we have a mix of meat eaters and vegetarians in my household. So I often adapt recipes and cook 2 different versions so that everyone is happy.

Can you make this cheeseburger pie vegetarian?

There is a super simple way to make this vegetarian, just swap out the ground beef with your favorite vegetarian crumbles. Using them makes it a super simple change and your family may not even notice!

You can also substitute lentils, they are easy to swap for ground beef in most recipes. They will change the texture of the dish a bit but they are still a great option for creating a vegetarian version.

Or you can substitute beans, black beans make a great replacement for ground beef. If you want to run with it you can also add some corn and taco seasoning and make a Mexican version!

I usually double this recipe to make 2 pies. Each one makes 6 good size servings, and we like to have it for lunch the next day too!

Here’s how to make this Cheeseburger Pie-

1 lb. Lean Ground Beef

3/4- Cup Chopped Onion

2 tsp. Olive Oil

1/2 tsp. Salt

1/4 tsp. Pepper

1/2 tsp. Garlic Powder

1 1/2- Cup Shredded Cheddar Cheese

1- Cup Milk

2- Eggs

1/2 Cup Bisquick

Preheat your oven to 400 and grease a 9 inch pie pan.

In a skillet heat your olive oil over medium heat, add in your onion, and salt. Cook until the onion is translucent.

Add ground beef to the skillet along with the pepper, and garlic powder. Cook and crumble until all the ground beef is cooked through.

Drain the ground beef and place it in the bottom of your prepared pie pan.

In a medium size bowl whisk together your eggs and milk, add in the Bisquick and continue whisking until everything is blended together (a few small lumps are ok)

Spread your shredded cheddar cheese over the ground beef layer, and then pour your Bisquick mixture evenly over the top.

Place the pan in the oven for 25 minutes or until cooked to golden brown and no longer jiggly in the middle.
