Cottage Cheese Bagels : Easy Protein Bagels Recipe

Ingredients

  • 1 Cup Cottage Cheese full fat or 2% excess liquid drained
  • 2 Large Eggs
  • 1 1/4 Cup All-Purpose Flour plus extra for kneading
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 Tbsp Water
  • Everything Bagel Seasoning

Instructions

  • First preheat the oven to 350 and line a baking sheet with parchment paper.
  • Drain any excess liquid from your cottage cheese before measuring.
  • Now we’re going to combine the cottage cheese and one large egg. If you have an immersion blender you can place the cottage cheese and egg in a large mixing bowl and use the immersion blender to blend them together. You can also place them in a food processor or blender and blend cottage cheese and the egg until smooth and then transfer the mixture to a large baking sheet.
  • In a medium size bowl combine one cup of flour, baking powder, and salt. Stir to mix well.
  • Add the flour mixture into the egg mixture stirring by hand or with the dough hook of a stand mixer until everything is well incorporated. The dough will be very sticky and stretchy. You can add up to 1/4 cup more flour to make the dough manageable.
  • Turn the dough out onto a floured surface and gently knead into a large ball. Divide the ball into four equal sections.
  • Form each dough ball into a bagel shape and place onto your prepared baking sheet
  • In a small bowl beat an egg with one tablespoon of water to form an egg wash.
  • Use a pastry or basting brush to brush bagels with the egg wash and then sprinkle with everything bagel seasoning.
  • Bake bagels for 25-30 minutes or until golden brown.
  • Allow bagels to cool before slicing and serving or storing in an airtight container. Serve the bagels with your favorite spreads or toppings.
