I love a breakfast casserole! They are perfect for any time you are feeding a crowd. This one is a great easy recipe to make for family gatherings, holiday parties or brunches or as an amazing make ahead breakfast for busy weekday mornings. I like to make a batch and refrigerate it in individual servings to pull out of the fridge and heat for a super quick breakfast!

We love a tater tot casserole for dinner, whether it is a traditional ground beef recipe or a chicken tater tot casserole you can’t beat it! This easy tater tot breakfast casserole recipe is delicious as it is written but it is also super easy to customize for what your family loves! You can add some extra veggies if desired, a little bit of sautéed bell peppers are a great addition (green or red) or green chiles for some spice or even some chopped spinach. You can use your favorite breakfast meats like diced ham or turkey sausage. Another great way to mix it up is to use different cheeses! Pepper jack cheese is a great addition to add a little bit of spice or you can use a mild cheddar for a more mild flavor.

What is the best sausage to use for this tater tot casserole?

I like to use a basic breakfast pork sausage for this delicious dish. However you can use other varieties if desired. Maple flavored sausage is delicious, if you like spice hot sausage can be used! Another great lower calorie option is turkey sausage!

Can I make this breakfast casserole ahead of time?

This hearty casserole is excellent for making ahead. It makes it perfect for a weekend breakfast, holiday gathering, or weekend brunch! You can make this casserole the night before and pop it in the oven in the morning. To make tater tot breakfast casserole ahead of time just assemble the casserole and cover the unbaked casserole with plastic wrap or aluminum foil and place in the refrigerator overnight. The next morning just place it in the oven and bake according to the recipe directions. The best part of having this casserole ready to go is that even if you’re not a morning person you can have a delicious breakfast!

Easy Tater Tot Breakfast Casserole Ingredients

1 lb Ground Breakfast Sausage

1 lb Bacon

32 oz Package Frozen Tater Tots

12 Large Eggs

1/2 Cup Heavy Cream

1/4 Cup Sliced Green Onions

1 1/2 Cups Monterey Jack Cheese Shredded

1 1/2 Cups Sharp Cheddar Cheese Shredded

Salt & Black Pepper

Preheat the oven to 350 and butter a 9×13 baking dish.

Here’s How to Make Tater Tot Breakfast Casserole-

Preheat the oven to 350 and grease a 13×9 inch baking pan.

Cook the bacon to your desired level of crispiness then drain any excess grease and chop into small pieces. I like to undercook it slightly so that as the casserole bakes it doesn’t get over cooked.

Cook sausage in a large skillet over medium heat crumbling and stirring while browning, set aside.

Place eggs, heavy cream and a pinch of salt and pepper in a large bowl. Whisk together thoroughly until all of the eggs are blended and everything is evenly mixed.

Add in sliced green onions and 1/2 cup of each of the cheeses, and mix thoroughly.

Place the tater tots in an even layer on the bottom of the prepared casserole dish.

Layer the cooked bacon and sausage over top of the tater tots.

Pour the egg mixture over the bacon and sausage.

Bake the casserole in the oven and bake for 40-45 minutes or until egg appears set.

Sprinkle remaining cheese over the top of the casserole and continue baking for 5-10 minutes or until cheese is completely melted.

Serve the casserole warm.

Store any leftovers refrigerated in an airtight container.
