Every year we have a 4th of July gathering and each year we’ve added more and more people to our guest list! So I’m always looking for dishes that will feed lots of people! These cookie bars are perfect because all you have to do is make the dough and spread it on the baking sheet. No scooping dough or making multiple batches of cookies! So they are great for prepping for a party.

FAQ & Tips-

Can I make these cookie bars ahead of time?

Absolutely! These keep really well in an airtight container for 4-5 days. They are great for prepping before a gathering to have ready to go.

Can I use white chocolate chips?

Yes! White chocolate chips go well with the patriotic colors of these cookie bars and taste delicious!

Can I cut them smaller?

For sure! These cookie bars can be cut into any size or shape you’d like! You can easily cut them into smaller squares, sticks, or even use a cookie cutter to make shapes!

Here’s what you’ll need for this easy cookie bar recipe-

1 Cup Butter– You can use salted or unsalted butter, it will need to be softened to room temperature.

1 ½ Cup Brown Sugar– Make sure to pack it when measuring to get an accurate amount.

½ Cup White Sugar– You can use regular granulated sugar or cane sugar.

2 teaspoons Vanilla Extract

3 Eggs

3 Cups All Purpose Flour

1 teaspoon Baking Powder

1 teaspoon Baking Soda

1 teaspoon Salt

2 Cups M&M’s– Divided in half, you’ll be mixing in one cup and topping the cookie bars with one cup.

2 Cups Chocolate Chips– You can use semi sweet chocolate chips or milk chocolate.

Here’s how to make these patriotic cookie bars-

First preheat your oven to 350 and line a rimed baking sheet with parchment paper. Butter the entire surface of the parchment and sides of the baking sheet.

Next, in a large bowl, with an electric mixer, or in the bowl of a stand mixer, cream butter, brown sugar, and white sugar together until light and fluffy.

Next add in the vanilla and eggs, continue mixing on medium speed until the eggs are well incorporated.

In a separate bowl whisk together flour, baking powder, baking soda, and salt until well combined.

Add half the flour mixture to the butter mixture and mix until well incorporated. Add the remaining dry ingredients and continue mixing until all ingredients are well blended.

Add in chocolate chips and one cup of M&M’s fold in using a spatula or wooden spoon until evenly distributed throughout the cookie dough.

Transfer dough into your prepared baking pan and spread it evenly making sure to get it an even thickness. Sprinkle the remaining 1 cup of M&M’s across the top.

Place in oven and bake for 20-25 minutes or until golden brown and the center is completely set. The edges will be a deeper golden than the middle. The edges will be a deeper golden than the middle. Your cooking time may vary depending on your pan, and oven so watch the cookies closely. 

Allow to cool in the pan on a cooling rack for at least 30 minutes before cutting into squares.
