Summer is in full swing!! And nothing says summer like an awesome snack to enjoy at the pool or beach! This Italian Salsa is not only delicious but packed with healthy fresh veggies, perfect for snacking all summer long!
We’re only a couple of weeks into summer and already there is so much going on! We’re planning a graduation party for the teenager, the younger boys are running track, and we’ve been spending as much time as possible at our lake cabin… It’s shaping up to be a great summer!
One of the things that I try to do when we’re running like is to have a delicious, healthy snack to take along. It doesn’t matter where we’re going or what we’re doing it seems like someone is always hungry. Snacks like this Italian salsa are easy, healthy, and packed with fresh summer veggies! Perfect!
On a recent trip to Sam’s Club to pick up supplies for the graduation party, I couldn’t help but pick up some of the amazing fresh tomatoes they have! There is nothing that inspires me more to create delicious food than fresh veggies! Here’s what you’ll need for this Italian Salsa –
2 Cups Chopped Tomatoes- (any kind)
1/2 – Red Onion
2 Tbsp Olive Oil
2- Cloves Garlic
2- Tbsp Balsamic Vinegar
1/2 – Cup Shredded Mozzarella
1- Can Black Olives
2- Bunches (about 1 cup packed leaves) Fresh Basil
The first thing you want to do is put your olive oil in a small bowl. Finely chop or press your garlic into the olive oil and pop it in the microwave for 30 seconds. This infuses the garlic into the olive oil and makes it delicious!
Now finely chop your tomatoes, onion, and black olives and toss them in a large bowl.
To cut the basil it’s easiest to roll all the leaves together and then finely chop them, alternately you could pulse them in a food processor.
Add the basil in with the tomato mixture, add in the cheese, then pour your olive oil and balsamic vinegar over the top.
Stir until everything is well incorporated.
Serve with tortilla chips, pita chips or crackers!!
This recipe tastes even better the next day so it is perfect for preparing the day before a picnic or trip to the beach or pool. It stores beautifully and the flavors meld together and are so so tasty!

After my experience last year with skin cancer I‘ve learned so much about keeping safe in the sun, and was super pleased to find that Sam’s has everything I needed to keep my family safe!
#1- Sunscreen– This is the big one! Even on cloudy days or days where you think you won’t be getting a lot of sun. Most of the time we remember to use a high SPF at the beach or pool, but a good sunscreen is a must for almost every summer day!! Not all sunscreens are created equal though, you don’t want to use brands full of fragrance, parabens or that include retinyl palmitate… they can do more harm than good! Look for brands that are included on the EWG safe sunscreen guide, that do the job without harmful chemicals. Then use it! Take it with you and when in doubt lotion up!
#2- Shade– Now I know everyone loves the feel of sun on their skin, and the vitamin D is so important! Having an area to get out of the direct sunlight is a must though! Whether it’s a tree, pavilion, umbrella, or pop up sunshade, make sure that you’ve got an area to get out of the sun for periods of time to help limit your exposure.
#3- Cover up- One of the best ways to keep your skin safe is with light weight clothing and hats! Just because something has sleeves or a longer hemline doesn’t make it hotter to wear. You can find great thin cotton fabrics that help protect your skin. For swimming look for shirts that are made for the water to add a layer of protection! A nice wide-brimmed sun hat can protect your face while lounging on the beach!
#4- Get Your Check Ups! – I just scheduled my 6 month dermatologist appointment to make sure that I don’t have any new spots of concern. Most people don’t need to be seen as frequently but it is important if you have a spot that you feel is suspicious get it checked out! Just like any other area of health your skin needs to be checked up!! Making sure your overall health is great is easy as a Sam’s Club member- with their monthly health screenings (On the second Saturday of each month, the next one is June 11th!) you can stay on top of wellness while shopping for healthy food and everything your family needs!
