Our family loves rice krispie treats, they are the perfect treat for any occasion, they are easy, delicious, and can be decorated or flavored to create amazing combinations. This time of year I’m always looking for fun additions to our easter celebration and these easter egg rice krispies treats are perfect! They make an impressive display with their bright colors and fun sprinkles but are really simple to make! Make them alongside this no bake Mini Egg cheesecake for a delicious Easter dessert spread!

FAQ & Tips for Success

Can I fill these with candy?

Absolutely! These fun Easter eggs can be filled with all kinds of fun Easter treats like jelly beans, chocolate eggs, or any other small candy. To fill them you’ll need to make two hollow egg halves, fill them and then press them together. You can do this using your hands, and shape them that way, or you can use plastic Easter eggs as molds and press the cereal mixture into each half, fill and then press them together. Make sure to butter or spray with nonstick cooking spray the inside of your plastic egg before getting started! There is a bit of a learning curve to get the technique right but once you do it’s pretty easy!

Can I omit the food coloring?

Yes! If you prefer natural colored eggs then you can absolutely leave out the food coloring. These are fun to decorate with candy melts, sprinkles or even frosting so if you would like a blank canvas go ahead and leave out the coloring!

Can I use colored candy melts?

Want to mix up your colors? Go ahead! We chose to do white candy melts to contrast the colorful eggs and show off the fun sprinkles but if you’d like to use colored melts you sure can! You can use whatever fun colors you’d like! Some don’t melt as smoothly as others so if you need to you can add about a tsp of shortening to your melts to get a nice smooth dippable texture! Also if you want to color white candy melts make sure you have oil based food coloring (like these) so that your chocolate doesn’t seize.

Can I use different cereal?

Want to make chocolate eggs? Use cocoa rice cereal! Want to and a bunch of color? Fun colorful cereals like Fruity Pebbles work beautifully just remember that different varieties of cereal may measure differently so you might have to add a little more or less to your marshmallow mixture!

Butter your hands-

These rice krispie eggs are easy to shape with just a gentle squeeze, however they can be a sticky mess! When you are ready to create the Easter egg shape make sure to set up an area with wax paper for the finished eggs and a small dish with a couple of tablespoons of butter to keep your hands from sticking. I like to butter the palms of my hands and my fingers so that scooping out the mixture and molding it into shape is easy and not so sticky! Of course, make sure your hands are clean before you get started!

Here’s what you’ll need for these Rice Krispie Easter eggs-

4 ½ Tbsp Butter + 1-2 Additional Tbsp– You’ll be melting the butter so no need to soften it. I like to use salted butter but you can use unsalted if you prefer.

7 ½ Cups Mini Marshmallows (about 1 ½ bags)– Mini marshmallows work best for this recipe because you’ll be measuring them by the cup. Larger marshmallows are harder to measure accurately.

6 Cups Rice Krispies Cereal– You can use any brand of crispy rice cereal that you like.

1-2 Cups White Candy Melts– Candy melts are best for melting and coating these treats, you can also use white chocolate chips with 1-2 tsp shortening added.

Easter Sprinkles– You can use any sprinkles that you’d like to decorate these treats.

3 Colors Food Coloring – I like to use gel food coloring, but liquid works too, you’ll need to use a little more if using liquid.

Here’s how to make these treats

*Note these directions are for creating 3 different colors of eggs, so the ingredients will be divided into thirds. If you are creating more or less colors you can divide the ingredients accordingly.

Place 1 ½ Tbsp butter and 2 ½ Cups marshmallows in a medium saucepan over medium-low heat, stirring frequently, until melted and smooth.

Add in a few drops of food coloring and stir until well incorporated, add more colors to reach desired color. Color will lighten when the cereal is added so make it a little brighter than you want your final product to be.

Remove the marshmallow mixture from the heat and add in cereal. Mix until the cereal is evenly coated.

Butter the palms of your hands and fingers and then scoop about 1/4 cup of the rice krispie mixture.

Press the mixture into egg shapes and place them on a piece of wax paper or parchment paper to cool. Continue until the entire mixture is shaped into eggs.

Repeat this process with the next two colors, working with one at a time.

Once all of your eggs are made and cooled it is time to dip them in chocolate.

Lay out parchment paper or wax paper to prepare your surface, place your sprinkles in a shallow dish.

Place the candy melts in a double boiler and heat over medium heat until melted and smooth. Or place them in a microwave safe bowl and heat in 30 second increments stirring in between until melted.

Dip each egg half way into the chocolate and then sprinkle on the sprinkles. Place on wax paper or parchment to cool.

Repeat with additional eggs until all of them have been dipped and covered with sprinkles. Allow to cool completely.

Store in an airtight container .
