I have a house full of hungry boys.
Seriously hungry. My oldest just turned 21, my middle one is 16 and my youngest is 11. If you are the mom of boys you know that I am currently in the throws of their hungriest years.
They’re kind of like infants, they need to be fed at least every two hours. But unfortunately, they need something far more filling then babies do!
So I try my best to come up with delicious, healthy and flavorful dishes that they’ll like and that will hopefully keep them full for more than 10 minutes.

So I created this Mediterranean quinoa salad it is so full of
This is a great meal to prep ahead, if you have your quinoa cooked and your veggies chopped it comes together in literally minutes.
Here’s what you’ll need for this Mediterranean Quinoa Salad
3- Cups Cooked Quinoa – cooled
1-Pint Grape Tomatoes
1-Large Cucumber
1-Can Black Olives
¼- Cup Chopped Red Onion
2-Tbsp Balsamic Vinegar
2-tsp Chopped Garlic
2- Tbsp Olive Oil
4oz. Container Feta Cheese
First thing you want to do is chop your tomatoes, cucumber, and black olives into bite size pieces. You can peel your cucumbers if you want or you can leave the skin on, that is entirely up to you!
Now in a large bowl combine your veggies, feta and quinoa.
In a small bowl combine your olive oil, garlic and balsamic vinegar and stir until well combined.
Now pour your dressing over your veggies and quinoa and stir until everything is well coated.
You can serve this Mediterranean quinoa salad at room temperature or chill it for later. It keeps well in an air tight container.
