- 3- Cups Cooked Quinoa – cooled
- 1- Pint Grape Tomatoes
- 1- Large Cucumber
- 1- Can Black Olives
- ¼- Cup Chopped Red Onion
- 2- Tbsp Balsamic Vinegar
- 2- tsp Chopped Garlic
- 2- Tbsp Olive Oil
- 4 oz. Container Feta Cheese
1.Chop your tomatoes, cucumber, and black olives into bite size pieces
2.In a large bowl combine your veggies, feta and quinoa.
3.In a small bowl combine your olive oil, garlic and balsamic vinegar and stir until well combined.
4.Pour your dressing over your veggies and quinoa and stir until everything is well coated.
