Peach baked oatmeal is a delicious easy breakfast recipe that everyone loves! Bursting with juicy peaches and full of hearty oats this is the perfect recipe for busy mornings, holiday brunches, or enjoying with a cup of coffee anytime!

We have always loved healthy baked oatmeal and this recipe made with fresh delicious peaches takes plain baked oatmeal to a whole new level! I love to make baked oatmeal as part of our meal prep to have on hand all week, for parties or brunches, or to have as an after school snack! Having baked oatmeal on hand is a great way to start your day. It is easier to grab than a bowl of oatmeal but just as hearty and delicious!

This recipe is full of chopped peaches, and topped with sliced peaches for twice the peach flavor. It is absolutely delicious topped with real maple syrup, or even a dollop of whipped cream!

Can I make this Peach Baked Oatmeal Ahead of Time?

Absolutely! This recipe stores well so you can make it ahead and heat it up when you are ready to serve it. You can also mix it up the night before, cover the baking pan and then pop it in the oven in the morning to bake!

How to Serve Peach Baked Oatmeal-

This baked oatmeal is great plain but it is also great topped with real maple syrup, serve warmed topped with cream or milk, or even with whipped cream or ice cream as a snack or dessert. It is a great addition to a brunch spread alongside favorites like bacon, sausage, fruit salad, vegetable frittata, Bisquick breakfast casserole or Raspberry Oatmeal Bars

Can I use Canned or Frozen Peaches?

We love to use fresh peaches during peach season but you may be wondering if you can use canned peaches or frozen peaches. The answer is yes! I recommend if you are using frozen peaches that you allow them to thaw and drain before using them. If you are using canned peaches make sure to get peaches in juice and drain them well before using. If you freeze or can fresh summer peaches this is a great way to use them.

How to Store Peach Oatmeal Bake-

Leftover peach baked oatmeal can be stored in an airtight container. It can be stored at room temperature for 1-2 days, for longer storage it can be refrigerated. You can reheat in the microwave or heat the oven to 350°f and heat it for 5-10 minutes until warm.

Variations for this Baked Oatmeal Recipe-

Use Almond Extract – This peach oatmeal recipe uses vanilla extract but for a different flavor combination you can use almond extract. It is a delicious addition to this easy recipe.

Use Non-Dairy Milk– If you avoid dairy, or want to make this recipe a vegan version you can use non dairy milks. Almond milk or oat milk are great options. If you like a light coconut flavor coconut milk makes a great option.

2 cups old fashioned oats

¼ cup packed brown sugar

1 teaspoon baking powder

1 teaspoon ground cinnamon

Pinch salt

2 tablespoons melted butter

1 teaspoon vanilla extract

2 ½ cups milk

1 cup Fresh Diced Peaches

1 cup Fresh Sliced Peaches

Here’s How to Make Peach Baked Oatmeal Recipe

Preheat the oven to 375 degrees. Prepare an 8×8 baking dish by spraying it with cooking spray or lining it with parchment paper.

In a large mixing bowl, mix together the oatmeal, brown sugar, baking powder, cinnamon, and salt

Stir the melted butter into the dry ingredients until well mixed.

Add in the vanilla and milk and stir to mix well.

Add in the diced peaches and mix until they are well distributed.

Pour the batter into the prepared baking dish and smooth out evenly. Arrange the peach slices evenly across the top of the oatmeal.

Bake the oatmeal for 45 to 50 minutes.

Let the baked oatmeal cool completely for about 10 minutes before cutting and serving.

Serve topped with maple syrup, whipped cream, or your favorites oatmeal toppings.
