4th of July Mini Fruit Pizzas

For years and years I have had a go-to dessert for the 4th of July. I layer pound cake, berries, and cool whip in a cake pan and top it with strawberries and blueberries in the shape of a flag.
It has been my 4th of July dessert for years… maybe decades. You could call it tradition or call what it really is… a rut.
Let’s face it, I know how to make it, it is super easy, and requires no baking, but I was ready for a change.
I do love fresh summer berries for a patriotic dessert, they are always so delicious and nice and fresh tasting on a warm summer evening. The icing for these fruit pizzas is made with cream cheese. It is not overly sweet and heavy but instead a nice creamy, light icing that compliments the berries perfectly!
These aren’t your typical sweet on sweet cookie like you make for Christmas. These are more of a summer cookie that is perfect for after you’ve eaten hot dogs and macaroni salad!
These mini fruit pizzas are super easy to make, and they are a lot of fun because you can be creative with the patterns you create with your berries. You can make them all the same or make each one unique, whatever suits you best!
I will suggest you make extra though. These will be a hit with everyone at your party or picnic, and of course you’ll have to taste test a few!
Just a note before we get started, I didn’t specify the quantity of each kind of berry, it is up to you how many of each you use. But likely a pint of each will be enough to do all of you cookies.
Here’s what you’ll need for your 4th of July mini fruit pizzas-
2 Dozen sugar cookies (your favorite recipe or refrigerated dough)
8 oz Cream Cheese (softened)
¼ Cup Powdered Sugar
½ tsp Vanilla
Strawberries
Blueberries
Raspberries
Blackberries
Bake your cookies according to recipe or package directions and cool completely. I used Pillsbury refrigerated dough for mine and they are a delicious soft texture that works really well with this recipe!
Now in the bowl of a mixer combine your cream cheese, vanilla and powdered sugar until it is nice and fluffy.
Spread each of your cookies with an even layer of icing, I like to make it pretty thick.
Now your berries up into a variety of shapes and sizes. I like slicing my raspberries to create little rings, slicing strawberries to look like flower petals, and even cutting blueberries to create semi-circles. The possibilities are really endless.
Arrange your berries in patterns on your cookies to create a beautiful and festive platter!
