Add white chocolate chips – White chocolate is a great compliment to the delicious lemon flavor of these cookies. I like to add 1/2 a cup to my cookie dough.

Glaze your cookies– This easy cookie recipe is perfect topped with a basic lemon glaze. You can make a delicious simple lemon glaze with just powdered sugar and lemon juice. This is a great recipe to use!

Extra lemon flavor- If you want you cookies to have an even stronger lemon flavor you can add 1/2 tsp of lemon extract, this is a great addition if you don’t have lemon juice or lemon zest to give the cookies an extra burst of lemony goodness.

How to Store Lemon Cake Mix Cookies-

These cookies keep well in an airtight container at room temperature for 4-5 days. The powdered sugar coating may sink in but the cookies will still be great.

Ingredients for Lemon Cake Mix Cookies

Lemon Cake Mix – You can use your favorite brand of cake mix for this recipe. You’ll need a 15.5 oz. box. Cake mixes can vary in size you can use up to an 18 oz one for this recipe. If yours is less than 15.5 oz you will need to add a little flour or your cookie dough will be too lose. If you can’t find lemon cake mix you can use yellow cake mix and add 1-2 tsp of lemon extract to add the lemon flavor.

Cooking Oil – For these cookies you can use your favorite cooking oil. I like to use avocado oil but you can also use vegetable oil if you prefer.

Eggs – Make sure to use medium or large fresh eggs.

Lemon Juice – Fresh lemon juice has the best flavor for these cookies but if necessary you can use bottled lemon juice.

Lemon Zest – Fresh lemon zest adds a delicious boost to the lemon flavor in these cookies.

Powdered Sugar– This is used for rolling the cookie dough to create a crinkle cookie effect on these cookies. If you prefer to glaze your cookies skip rolling the dough balls in powdered sugar.

Here’s how to Make this Lemon Cake Mix Cookie Recipe

Preheat the oven to 375 and line a baking sheet with parchment paper or silicone baking mat.

In a large mixing bowl mix together lemon cake mix, cooking oil and eggs using a wooden spoon, spatula or electric hand mixer on low.

Add in the lemon juice and lemon zest and continue mixing until everything is well incorporated. This is a very soft dough, if it is too soft you can add 1-2 tbsp of flour to thicken it a bit.

Place the bowl in the refrigerator and chill the cookie dough for 20-30 minutes. This helps the cookie dough thicken so it is easier to handle.

Place the powdered sugar in a shallow dish or bowl.

Using a cookie scoop or spoon scoop out dough about a tablespoon at a time into the powdered sugar. Turn the dough ball to coat with powdered sugar and transfer it to the prepared cookie sheet.

Repeat, placing the cookie dough balls about 2 inches apart until you’ve used all of the cookie dough.

Place the cookies in the oven and bake for 9-11 minutes or until the cookies are set.

Remove from the oven and allow to cool on the baking sheet for 3-5 minutes before moving to a wire cooling rack to cool completely.
