Easy & Delicious Mango Lime Frozen Yogurt

The sun is shining, the birds are chirping, and Summer is in the air! And what goes better with Summertime then ice cream and frozen yogurt??

Now if you are lucky enough to live in a town that has a frozen yogurt store then you are very lucky! Here in my tiny Ohio town we don’t have one 🙁 . We have an ice cream shop or two but when it comes to froyo there is nothing.

That could be a problem, or it could be the catalyst for making up something at home that is tastier than what you can buy, not to mention healthier and free of any refined sugar!

In my book that is a win, win, win.

The only problem with this recipe is that you need some kind of industrial size food processor to make enough for your family, beacause it will go fast… super fast… mom- run- to- the- store- and- get- more- ingredients fast. My boys can’t get enough of it! My oldest is a fan of mango anything and my youngest (a junk food junkie) did not believe that this could possibly be healthy. 

It’s really good, and really easy it only takes 5 minutes people, less time than it would take to drive to the local ice cream or frozen yogurt shop.

I’ll stop talking now and give you the recipe!

Here’s what you’ll need for your Mango Lime Frozen Yogurt 

3- Cups Frozen Mango Chunks (I bought the pre-packaged kind. If you have fresh mangoes just make sure they’re good and frozen before using)

1/2- Cup Plain Greek Yogurt

3- Tbsp Lime Juice (about 2 fresh limes)

3- Tbsp Honey

 

Throw everything in the bowl of your food processor and blend until it’s nice and creamy! (I told you this was easy!) If your food processor is small you can blend it in batches and then mix them together at the end, that works well too! 

Once it is done if the consistency is perfect you can eat it immediately! If it isn’t quite frozen enough you can spread it in an 8×8 pan and pop it in the freezer for 15-20 minutes or until it is frozen a little more and thickened up. 

If you are making this ahead of time you can spread it in an 8×8 pan or other shallow dish, cover it, and freeze it. Remove it from the freezer about 15 minutes before serving to let it soften enough to scoop.

You could also put it in individual containers or line a muffin tin with plastic wrap and freeze individual scoops! Whatever you decide you can’t go wrong! This mango lime frozen yogurt will be a hit with your family, for a picnic or party, or for an evening with friends!
