I love a no bake dessert for the warmer months of the year and this one can be made with fresh summer strawberries so it is perfect! This is great dessert recipe for parties or picnics because it can be easily made ahead and travels well!

This no bake strawberry cheesecake is rich, creamy, and filled with fresh strawberries! An easy, fruity dessert perfect for spring, summer, or any occasion.

Equipment

  • 1 Springform Pan

Ingredients

  • 2 Cups Graham Cracker Crumbs
  • ½ Cup Butter melted
  • 1 Cup Powdered Sugar
  • 3 8 oz. Packages Cream Cheese softened
  • 1 Cup Heavy Whipping Cream
  • 1 ½ Cup Fresh Strawberries chopped or sliced
  • 1 3 oz box Strawberry Gelatin

Instructions

  • In a large bowl combine graham cracker crumbs and melted butter. Stir until well combined.

  • Press the graham cracker mixture evenly into the bottom of a springform pan.
  • Place the pan in the refrigerator while you make the filling (at least 20 minutes)
  • In a large mixing bowl using an electric mixer or in the bowl of a stand mixer beat the cream cheese until softened, add in the powdered sugar and heavy cream, gradually alternating them until they are all mixed in. Set aside.
    1 Cup Powdered Sugar, 3 8 oz. Packages Cream Cheese, 1 Cup Heavy Whipping Cream
  • In a separate bowl prepare the strawberry gelatin according to the package instructions. Allow to cool for about 10 minutes or until cooled to the touch.

  • Poor the cooled gelatin mixture into the cream cheese mixture gradually mixing slowly so it doesn’t splash. Mix until fully blended.
  • Pour the mixture evenly over the prepared graham cracker crust.
  • Top with sliced or diced fresh strawberries.
    1 ½ Cup Fresh Strawberries
  • Place the cheesecake in the refrigerator and chill for 4 hours.
  • Remove from the fridge, slice and enjoy!

Ingredients for No Bake Strawberry Cheesecake

Graham Cracker Crumbs– Graham cracker crumbs are a classic base for the crust of a cheesecake. You can swap them out for pretty much any other crispy crunchy cookie or flavor of graham cracker. This recipe is delicious with a chocolate cookie base, or a coconut cookie base. I have even used crunchy oatmeal cookies for a cheesecake crust. To make crumbs you can place your cookies or graham crackers in a large zip top bag and crush them with a mallet or rolling pin. You can also pulse them in a food processor to make more consistent crumbs.

Butter– I like to use salted butter for this recipe because I like the little bit of salt it adds to the crust. If you prefer unsalted you can use it. To melt the butter put it in the microwave for about 30 seconds or in a small pot over low heat.

Powdered Sugar– Also known as confectioners sugar or icing sugar, powdered sugar is great for no bake recipes because it incorporates well with the other ingredients.

Cream Cheese – For this recipe make sure your cream cheese is softened to room temperature so that it is easy to mix. I usually don’t think brand is important but for this recipe I prefer to use Philadelphia cream cheese. If you prefer another brand of cream cheese you can use it.

Heavy Whipping Cream– Heavy cream makes this cheesecake filling nice and rich. You want your heavy cream to be cold when you mix it into the cheesecake mixture.

Strawberry Gelatin- Strawberry gelatin helps this cheesecake set. You can use your favorite brand. When mixing it make sure that it is fully dissolved.

Fresh Strawberries- Fresh ripe strawberries are the perfect addition to this cheesecake. You can dice them finely, slice them , or chop them into chunks whatever you prefer.

Can this cheesecake be made ahead?

Absolutely! This no bake cheesecake is the perfect make ahead dessert. It can typically last for 5-7 days in the refrigerator as long as it is wrapped or in an airtight container. I often leave leftover no-bake strawberry cheesecake in the pan and just wrap the pan with plastic wrap or aluminum foil. You can also transfer it to a container to store.

Can I use frozen strawberries?

Yes! If strawberries are not in season and you want to make this strawberry cheesecake you can use frozen strawberries instead! Frozen strawberries tend to be a little watery so you’ll want to thaw them, drain them well and pat them dry before using. If they are mushy after thawing you can put them in a food processor to create a strawberry puree instead of cutting them into pieces.

Can I use a regular pie pan?

If you don’t have a springform pan and want to make this no-bake strawberry cheesecake recipe in a regular pie pan you can. Because springform pans and pie pans are often different dimensions and volumes so you may have extra filling or crust mix.

Serving suggestions-

This pie is delicious served with additional fresh strawberries, a dollop of whipped cream on top or even a drizzle of chocolate syrup.
