St. Patrick’s Day Sprinkle Cookies
St. Patrick’s day is full of fun and these cookies are perfect! They are soft and buttery and delicious! Covered in fun sprinkles they look like leprechaun treasures!
I love St. Patrick’s day. It is a fun day, a nice light hearted holiday that doesn’t require a ton of preparation but can be fun for everybody!
Most of the St. Patrick’s day festivities are geared toward adults, after all it is the day where green beer floweth and whiskey is everyone’s favorite drink.
Ever since I had kids I’ve looked for ways to make St. Patty’s a family friendly holiday. We do a family dinner with corned beef and cabbage, and Irish soda bread. My mom always “magic” soda for the boys that turns green as she pours it into the glass. (hint she puts a couple of drops of green food coloring at the bottom of each glass!)
So I thought it would be fun to make some cookies to celebrate the luck of the Irish and add some sprinkles to our St. Patrick’s day celebration.
These cookies are really delicious. The texture is pretty much perfect, they are nice and soft with a little crunch from the sprinkles on the outside.
You do need to plan ahead to make these because they need to refrigerate for 2 hours, so plan accordingly! This recipe makes about 3 dozen cookies, it is easy to cut in half if you need less cookies (who needs less cookies? I don’t know, but you might)
Here’s what you’ll need for these St. Patrick’s Day Sprinkle Cookies
1- Stick Butter (softened)
1/4- Cup Cream Cheese (softened)
1 1/4- Cup Sugar
2- Eggs
1 1/2- tsp Vanilla
2 1/2- Cup Flour
2- Tbsp Corn Starch
1- tsp Baking Soda
1/4- tsp Salt
1- Cup Green Sprinkles
1- Cup Gold Cake Sequins
First, in the bowl of an electric mixer combine your butter and cream cheese until well mixed. Add in your sugar and vanilla and continue blending.
Next add in your eggs one at a time, mixing between additions.
In a medium size bowl combine your flour, corn starch, baking soda, and salt, mix well.
Add your flour mixture to the butter mixture gradually until it is all incorporated.
Cover your bowl and pop it in the fridge for at least 2 hours. (You can leave it overnight if you want to make the dough a day ahead)
When you’re ready to bake your cookies preheat your oven to 350.
Using a spoon or a dough scoop, scoop out tablespoon size pieces of dough.
Roll the dough into a ball and then roll in your gold cake sequins and then your green sprinkles. You can also combine both kinds of sprinkles but I found I got a better balance of sprinkle colors.
Now place your cookies about an inch apart on on a cookie sheet.
Bake for 10-12 minutes. Once they are done allow them to cool for 3-5 minutes on the cookie sheet and then move them to a wire rack to cook completely.
Enjoy with a nice Irish coffee (or milk for the kids)!

- 1- Cup Gold Cake Sequins
Instructions
- In the bowl of an electric mixer combine your butter, cream cheese, and sugar, until well blended.
- Add in vanilla and eggs one at a time mixing well between additions.
- In a medium-size bowl combine flour, corn starch, salt, and baking soda.
- Gradually add the flour mixture into the butter mixer and mix until well incorporated.
- Cover the bowl and refrigerate for at least 2 hours.
- When you are ready to bake preheat your oven to 350
- Scoop out Tablespoon size scoops of dough. Roll it into balls.
- Roll the dough ball into the gold cake sequins and then in the green jimmies.
- Place about an inch apart on a cookie sheet and bake for 10-12 minutes.
- Allow to cool for a few minutes on the cookie sheet then remove to a cooling rack to cool completely .
