Lasagna is a classic dish that everyone loves, tender noodles, cheesy filling and hearty meat sauce combine to create a delicious taste combination that is delicious! These lasagna roll ups with meat sauce are a fun twist on traditional lasagna.

Here’s why we love this recipe-

It is a great make ahead recipe- These lasagna rollups are great for meal prep because they can be made ahead of time and stored in the fridge or freezer. They are great for busy weeknights to pop in the oven and serve. You can also store them in individual servings to have for easy lunches or dinners for only one or two people. This makes a great freezer meal to have on hand for a busy day! It is also a great recipe to make for a meal train and take to someone who could use a delicious meal.

It is a family favorite! My whole family loves a classic lasagna so these are obviously a hit! These are an easy way to enjoy delicious lasagna any time!

This lasagna roll-ups recipe makes a hearty meal that is great to pair with simple sides and serve! We love to serve them with garlic bread, or bread sticks a side salad, steamed broccoli or green beans or any other veggie you love!

FAQ

Can I use different meat?

Absolutely! I love Italian sausage for this recipe but if you want to use a different ground meat you can. Ground turkey or lean ground beef both make great options. Make sure to season your meat so that your final result is full of flavor.

How to freeze these lasagna roll ups-

These freeze well and there are a couple of different ways to do it. If you want to freeze the whole dish you’ll want to make it according to the directions but don’t bake it. Instead let it cool completely and then wrap it with a layer of plastic wrap and then foil. If you want to freeze them for a longer amount of time you can assemble the lasagna rollups and instead of placing them in a baking dish place them on a cookie sheet sprayed with non stick cooking spray. Place them in the freezer and once they are frozen completely you can package them in freezer bags or vacuum seal them and store in the freezer. When you are ready to cook them you can place them in the baking dish and cover them with sauce and cheese to bake. Bake the frozen lasagna rolls covered with aluminum foil for about 50 minutes at 350, uncover and continue baking for about 10 minutes.

What sauce works best?

I usually use our favorite store bought pasta sauce but you can use any sauce you love. If you have a homemade Italian Spaghetti Sauce you want to use that will work beautifully! Just use whatever sauce your family loves the best!

Here’s what you’ll need for these lasagna roll ups

12 Sheets of Lasagna

1 Pound Italian Sausage

1/2 Cup Diced Onion

3-4 Cloves of Garlic -diced

2 tsp Italian Seasoning

4 Cups of Marinara Sauce

15 oz Ricotta Cheese

1 Large Egg

1/2 Cup Shredded Parmesan Cheese

2 Cups Shredded Mozzarella Cheese

Here’s how to make these lasagna rolls-

First preheat the oven to 350

Next cook the lasagna noodles in salted water according to package directions to al dente. Drain noodles and place in a large bowl of cold water, this keeps the pasta noodles from sticking together.

Cook Italian sausage in a large skillet over medium heat, stirring and crumbling as it cooks. Drain the sausage if there is a lot of grease.

Add in diced onions. Cook over medium heat until tender, about 5-7 minutes.

Add in sauce, stir and bring to a simmer. Allow to simmer over low heat for about 5 minutes.

While the meat mixture is simmering we’re going to make the cheese mixture.

In a large bowl combine ricotta cheese, 1/2 cup of mozzarella cheese, and shredded Parmesan cheese. Add in Italian seasoning, diced garlic, and large egg. Stir until well combined.

Using a 13×9 inch baking pan or casserole dish spread about 1/2 cup of the meat sauce across the bottom of the baking dish.

Place the cooked lasagna noodles on a chopping block or baking sheet. Lightly pat the noodle dry with paper towels. Work in batches if necessary.

Spread about 2 tablespoons of the ricotta filling across the smooth center of the noodles leaving about 1/2 an inch at the top and bottom.

Spread about 2 tablespoons of the meat sauce across the cheese mixture.

Starting with the short end of the noodle roll it up. Place seam side down in your prepared pan.

The spread the remaining sauce across the tops of the lasagna rolls.

Next sprinkle the remaining shredded mozzarella evenly across the lasagna rollups and sauce.

Cover the baking dish with aluminum foil and bake for 30 minutes.

Uncover and continue baking for 5-10 minutes or until cheese is melted and bubbling.

Serve warm.
