There are a lot of sugar cookie recipes in the world but this one is our favorite! The secret ingredient in these super soft sugar cookies is the addition of pudding mix in the dough, it makes a creamy vanilla flavor and a soft textured cookie that is absolutely delicious!

Absolutely! This soft and chewy pudding sugar cookies recipe can be made with pretty much any flavor of dry instant pudding mix to create an entirely different taste! Pistachio pudding cookies are amazing, so are lemon pudding cookies! You can use chocolate or butterscotch, or even cheesecake instant pudding to create a ton of different flavors!
How to store these cookies?
These cookies store well in an airtight container. If the cookies are plain you can stack them. If they are frosted I like to place a piece of wax paper or parchment paper in between the layers so that the frosting doesn’t transfer to the other cookies.
Add ins-
The great thing about this pudding cookie dough is that you can not only change up the flavor easily but you can also add in addition ingredients to create even more flavors. Add in chocolate chips or chopped nuts for chocolate chip cookies with a delicious soft texture. Dried fruits or raisins are another amazing addition. You can also change the flavor of these cookies by using different extract. Almond extract adds a delicious flavor, or you can try other extracts like lemon, orange or even peppermint.
Use Gel Food Coloring-
If you decide to frost these yummy cookies you want to make sure to use gel food coloring. Gel food coloring creates a more vibrant color so you can add less.
Ingredients for these Vanilla Pudding Sugar Cookies
For the Cookies
¾ Cups Butter – softened to room temperature
¼ Cup Shortening
1 ½ Cups Sugar
2 Eggs
1 ½ tsp Vanilla Extract
2 ½ Cups All Purpose Flour
1- 3.4 oz Box Instant Dry Vanilla Pudding Mix
1 tsp Baking Powder
½ tsp Salt
For the Frosting-
½ Cup Unsalted Butter – Softened
½ tsp Vanilla Extract
6 Tbsp. Heavy Cream
¼ tsp Salt
4 Cups Powdered Sugar
Gel Food Coloring
Here’s how to make these pudding cookies-
Preheat oven to 350 line a baking sheet with parchment paper.
In a large bowl with an electric mixer or in the bowl of a stand mixer fitted with a paddle attachment cream butter, shortening, and sugar together until well mixed.
Add in dry pudding mix, eggs and vanilla. Continue mixing until thoroughly incorporated.
In a separate bowl combine flour, baking powder and salt.
Gradually add the flour mixture about a cup at a time to the butter mixture a little bit at a time mixing between additions and scraping down the sides of the bowl, until all of the dry ingredients are incorporated.
Using a dough scoop or spoon drop dough by the tablespoon onto the prepared cookie sheet, about 2 inches apart, lightly press the cookie dough balls to flatten them slightly.
Bake for 12-15 minutes or until the edges are lightly golden brown around the edges.
Remove from the oven and allow to cool on the baking sheet for 5 minutes before removing to a wire rack to cool completely.
To make the frosting-
In a large mixing bowl with an electric mixer beat butter until light and fluffy. Add in powdered sugar and heavy cream a little at a time alternating and mixing between additions. Continue adding and mixing until all the powdered sugar and cream has been added. Add in vanilla and salt and mix until well incorporated.
Add food coloring if desired and mix, add additional food coloring until desired color is reached. You can also separate the frosting into smaller bowls to color separately if you want more than one color of frosting.
Spread frosting on cooled cookies, sprinkle cookies with sprinkles or other decorations if desired.
