Chocolate Covered S’Mores Cookies

Nothing says summer like s’mores! Seriously, one of the best taste combinations out there is a melted marshmallow and chocolatel-y goodness!
While I do love making s’mores by the campfire I also love creating other treats with the same flavors! S’mores flavored treats are perfect for summer parties, the 4th of July, or even in the middle of the winter!
These chocolate covered s’mores are simple to make but they turn out so cute that you could package them up for teacher gifts, bake sales, or other occasions.
Here’s what you’ll need for your Chocolate Covered S’mores Cookies
1 (11 ounce) box Nilla Wafers
1 (10 ounce) bag miniature marshmallows
1 (8 ounce) bag milk chocolate morsels
½ cup marshmallow bits (with the marshmallow dust that accumulates in the container)
1 tablespoon coconut oil or vegetable shortening, to improve chocolate consistency
A chocolate dipping tool also comes in quite handy.
First you’ll want to pre-heat your oven to 350 and line a baking sheet with parchment paper.
Now place half of the Nilla wafers on your baking sheet and put 3 marshmallows on each one.
Now pop them in the oven for 5 minutes until the marshmallows have puffed up nicely.
Remove them from the oven and quickly press another Nilla wafer onto the top of each. If the marshmallows cool too quickly and the Nilla wafers don’t stick you can re-stick them with a dab of melted chocolate.
Now it’s time to melt your chocolate. You can microwave it or melt it in a double boiler. I personally prefer a double boiler (I just use a heat safe bowl over a pan of water) it helps keep the chocolate melted while you work.
If you are using a microwave you want to put your coconut oil in with your chocolate chips microwave on high in 15-20 second increments stirring in between. Don’t overheat it or it will seize, if that happens it becomes hard and you’ll have to start over again.
If you are using a double boiler you’ll want to combine your chocolate chips and coconut oil or shortening in a heat safe bowl or bowl of a double boiler. Heat over a few inches of water in a pan over med/high heat and stir until melted.
Once your chocolate is melted you can dip your Nilla wafer sandwiches. Use a slotted spoon, fork or chocolate dipping tool and dip them one by one into your melted chocolate.
If any have fallen apart now is the time to give them a dab of chocolate to stick them back together. Once they’re secured you can dip them!
After dipping while your chocolate is still soft sprinkle on the marshmallow bits.
Once they’re all dipped and sprinkled you want to let them cool, you can pop them in the freezer or refrigerator to speed the process.
You’re all finished! They are ready to eat! They keep well in an airtight container until you are ready to serve them. Take them to your next party or picnic and they are sure to be a hit!
