Easy Enchilada Casserole

This enchilada casserole has all the delicious flavors of enchiladas with a fraction of the effort! Layers of sauce, meat, cheese and tortillas combine to create a delicious combination that your family is sure to love!

I love enchiladas! But they can be kind of time consuming for a busy weeknight so I’ve often avoided making them.

Enter in this enchilada casserole. It has all the flavors of enchiladas but instead of individually rolling each one you just layer everything in a baking pan and pop it in the oven! It is so simple and delicious!

The nice thing about this enchilada casserole is that you can easily make different variations or tweak it to your liking, it is easy to customize!

Ingredients

  • 12 Small Tortillas Cut In Half
  • 1 lb. Ground Beef
  • 1 Can Beans Pinto Or Black Drained
  • 3 Cans Enchilada Sauce
  • 1 Can Corn – Drained
  • 1 Medium Size Onion- Diced
  • 1 Tbsp .Olive Oil
  • 3 Cups Shredded Cheddar
  • Toppings- Green Onions Tomatoes, Sour Cream

Instructions

  • Preheat oven to 350 and grease a of a 13×9 in pan.
  • In a skillet heat the olive oil and add in the diced onion. Sauté onion for about 10 minutes or until soft and translucent.
  • Add in ground beef and cook until browned, drain if necessary.
  • Add in beans, corn, and half a can of enchilada sauce, stir until well incorporated.
  • Spread about ¼ cup of enchilada sauce on the bottom of your prepared pan.
  • Layer  8 tortilla halves on top, arrange them with the cut side along the side of the pan so they make a nice solid layer.
  • Layer on  half of the meat mixture, cover it with sauce and add on  half of the cheese.
  • Arrange another layer of tortillas, and then the other half of the meat mixture, and more sauce.
  • Arrange the final layer of tortillas, cover it with sauce and remaining cheese.
  • Cover the pan with foil and bake fore 30 minutes, uncover and bake an additional 5-10 minutes.
  • Serve with your favorite toppings!


How can you customize this enchilada casserole?

Make it vegetarian– this is easy to make meatless. You can swap out the ground beef for a vegetarian ground beef replacement or another can of beans. You can use black beans or pinto beans or a little bit of each.

Make it with chicken– You can easily swap out the ground beef for cooked chicken. This is a great recipe to make with left overs or a rotisserie chicken from the grocery store to save you time!

Make it spicier– If you like more of a kick you can spice this casserole up with extra chili powder, pepper jack cheese, or by adding chilies or jalapenos.
