Preheat oven to 350 and grease a of a 13x9 in pan.
In a skillet heat the olive oil and add in the diced onion. Sauté onion for about 10 minutes or until soft and translucent.
Add in ground beef and cook until browned, drain if necessary.
Add in beans, corn, and half a can of enchilada sauce, stir until well incorporated.
Spread about ¼ cup of enchilada sauce on the bottom of your prepared pan.
Layer 8 tortilla halves on top, arrange them with the cut side along the side of the pan so they make a nice solid layer.
Layer on half of the meat mixture, cover it with sauce and add on half of the cheese.
Arrange another layer of tortillas, and then the other half of the meat mixture, and more sauce.
Arrange the final layer of tortillas, cover it with sauce and remaining cheese.
Cover the pan with foil and bake fore 30 minutes, uncover and bake an additional 5-10 minutes.
Serve with your favorite toppings!
