This mashed potato recipe is perfect for the holidays, it is a staple for Thanksgiving alongside my Vanilla Bourbon Cranberry Sauce and our Favorite Turkey Brine.
But the best thing about making these in the Instant Pot and so they are incredibly quick and easy! So they don’t need to be reserved for the holidays, they can be served any weeknight with meals like Salisbury Steak or any of these Instant Pot Chicken recipes.
I have a love for mashed potatoes that runs deep. They are seriously the best and I could pretty much eat an entire batch (like from a 5 lb bag!). They were one of the many things I started hearing about how great they were in the Instant Pot so I decided it was time for me to try them.
I mean, if it means making them quickly and easily so I can eat them more frequently its a win.
Now there are a LOT of different theories out there about how to make the best Instant Pot mashed potatoes. There are some people who use the steamer rack, some who try to get the potato to water ratio exactly right so they don’t need to be drained, some who use a mixer to mash them and some who believe a masher or ricer is the only way to go.
I honestly think it comes down to preference. I find you can never get the water to potato ratio exact so I just plan to drain them. I also like to mash mine with my kitchen aid so that they have a nice fluffy creaminess to them.
This recipe also has a whole lotta butter. I’ve tried to be conservative with it before but I just love the way these potatoes turn out with lots of butter! You can always add less and work your way up, but I’ll guarantee once you get there you’ll never go back!
I’m also a purist when it comes to mashed potatoes, a lot of recipes include garlic or other spices but I just stick with salt and pepper. You can always start with this recipe as a base and add in whatever you’d like.
Here’s what you’ll need to make these Instant Pot Mashed Potatoes
4 lbs Potatoes (about 5-6 large baking potatoes)
1/2 tsp Salt
1 1/2 Sticks butter
1/2 cup Milk
1 1/2 tsp Salt
1/4 tsp Pepper
The first thing you’ll need to do is wash and peel your potatoes.
Now roughly chop your potatoes, there is no need to cut them very small, you can just cut them into 4ths or 6ths.
Place them in your Instant Pot and fill with water, just enough to cover them. Add 1/2 a tsp of salt.
Now using manual mode set your Instant Pot on high for 8 minutes. When it is done quick release it.
Now drain the water and move back to the pot or into the bowl of a mixer add in remaining salt, butter and milk & pepper.
Now whip or mash in whatever way you prefer.
Serve them up with gravy, more butter, or just as they are!
