I have always loved classic chicken cordon bleu but stuffing and breading chicken is a bit labor intensive for a busy mom. That is why I love this recipe, it has the delicious traditional chicken cordon bleu flavors of salty ham, creamy chicken, Swiss cheese and a creamy Dijon sauce, and buttery breadcrumbs in casserole form.

This easy recipe is a great way to use up leftover ham or leftover chicken. This delicious recipe comes together easily so it is a great weeknight meal but it is also tasty enough to serve to guests or at a family dinner.

Simplify making this casserole– This casserole is perfect for busy weeknights especially if you follow these easy tips. If I am making chicken or ham for another recipe I like to cook extra to have on hand for this casserole. You can also use a rotisserie chicken so that you don’t have to cook chicken. Or put your chicken breasts in a slow cooker so that they are cooked and ready to go when you are ready to assemble the casserole for dinner. You can use sliced deli ham for a quick addition

What to serve with this casserole- I like to pair this casserole with an easy side dish to keep dinner simple. I usually serve it with a simple roasted or steamed green veggie like green beans or broccoli. Another great option is a simple side salad. You can also serve it over something like rice or egg noodles for a complete and hearty dish.

Make this casserole low carb– This easy chicken casserole is full of fat and protein which makes it a great option for anyone following a keto or low carb diet. Simple swap the panko breadcrumbs for ground pork rinds on top of the casserole, use heavy cream in place of the milk, and you’ll have a keto chicken cordon bleu casserole that is low carb and full of flavor!

How to store this casserole- Store leftovers refrigerated in an airtight container. You can also wrap the casserole dish in plastic wrap or foil to store it.

Ingredients for Chicken Cordon Bleu Casserole-

4-6 Cups Cooked Chicken Breast- cubed or shredded

2 Cup Diced Ham

½ Cup Sour Cream

2 Cups Grated Swiss Cheese (one 8oz brick)

1 Tbsp Dijon Mustard

1 Cup Panko Breadcrumbs

4 Tbsp Flour

2 Cups Milk

¼ Cup Shredded Parmesan Cheese

6 Tbsp Butter

½ tsp Garlic Powder

Here’s How to Make Chicken Cordon Bleu Casserole

Preheat the oven to 350 and grease a 9×13 baking dish with butter or non-stick cooking spray

First you’ll need to make the cream sauce

Place 4 tablespoons of butter in a medium saucepan. Melt butter over medium-high heat.

Whisk in 4 flour and continue cooking for about 2 minutes or until the flour mixture is bubbling and starting to turn a golden brown.

Add in milk 1/2 cup at a time whisking between each addition until all of the milk has been incorporated.

Add in garlic powder, sour cream, salt and mustard, stir to mix well.

Turn down the heat to low and simmer for about 5 minutes.

Remove from the heat and add in shredded swiss, and parmesan cheese.

Stir until the cheese is melted and well incorporated.

Spread the cooked chicken in the bottom of the casserole dish in an even layer.

Evenly sprinkle the chopped ham across the chicken.

Pour the cheese sauce mixture evenly over the chicken and ham.

Melt remaining 2 tablespoons of butter.

In a medium bowl combine the bread crumbs and melted butter, mixing well.

Sprinkle the bread crumbs evenly across the top of the cheese sauce.

Place in your preheated oven and bake for 30-35 minutes until bubbly.

Increase the oven temperature to 425 and continue baking for another 10-15 minutes or until bread crumbs are a nice golden brown.
